Zucchini question

I have 4 zucchini that have been sitting around for various times - all longer than 1 week, maybe 2. However, they are still firm to the touch. Do you think they are ok? What can I do with them? Is it too late to chop them up and freeze? I am a newbie at everything - help please  Finger food ideas are especially needed as my hubby is trucker and eats on the run. Thanks!

If they are still firm, no worries. That is another wonderful thing about nonanimal products. Chop up and send with hummus?

Thanks, might look up that hummus recipe.....Would the nutrient loss be too great if I chopped them up and put them in the freezer now? What is the best way to do that?

Zucchini doesn't freeze well as it gets mushy. If I can't use what I have on hand, I shred it and put it in a freezer container in 1 cup increments. Then later thaw and use for zucchini bread.

Shredded, (or grated) frozen zucchini also works well in soups or pasta sauces. It just blends right in. If I have to freeze it, I grated it first. Can also use in smoothies.

I peel, chop and freeze. Then use it in soups, and even sauteed. I love a zucchini mexicali recipe from one of Barnard's books. I have used frozen zucchini in this recipe and it works.

Eat those suckers raw! Zucchini is delightful sliced up raw with a little dressing... you can even be fancy and call it "crudités"... which is just french for "cut up raw vegetables".  Zucchini is one of my favorites. Zucchini hummus is indeed marvelous, as is zucchini bread/muffins. Sautéed zucchini. Ratatouille. Zucchini lasagna. You get the idea. Just eat 'em!

I like to make a Ratatouille using Zucchini, tomatoes, onion and Italian spices. I serve it over polenta. Very good. I use Zucchini is my stir fry, you could make cupcakes, or bread. Or alone, just stir fry it or steam. In veggie soup. Veggies are so versatile. Have fun!

if you've got an egg replacer that you like, you can make zucchini pancakes (like potato pancakes but with shredded zucchini). The hard part is that it does (normally) use egg as the binder. I'm sure there are other binders (egg replacers) that will work, just haven't tried any yet. --Deb
