What is your food today? - Thurs Dec 30th

THis am i had kashi high fiber cereal w/unsweetened organic silk soymilk & a bananna & 2 cups coffee w/the soymilk.

Then i realized all i had ready for the whole day was a little left over tofu lasagna. So i made a "quick" soup. It started off easy enough, fry w/water onions & celery... take them out of the pot.. added kitchen basics vegetable stock and black eyed beans that were already cooked & frozen.. chopped up some carrots.. mederterian basil & cayanne pepper...thought i was done...

then i went the the fridge & saw small amounts of various leftover veggies.. shredded carrots, baby bella mushrooms, spinach, and squash.. so what the heck added them to it.. stirred... yikes too much veggies, no beans.. added a can of drained & rinsed black beans...now too thick.. ran downstairs to get more stock.. added another stock.. stir.. looks good... added more spice.. taste... yum.. missing something... cooked 5 min more & turned it off.

oh silly me.. no whole grains.. not too late yet.. boiled water in a separate pot & cooked barley for 45 min .. ran down to the treadmill while it was cooking..

when the barley was cooked drained, finished my workout, showered, dressed, then added barley to soup..stir till it looked good.. very interesting with the mushrooms & spinach.. put it in 8 individual glass bowls w/covers for reheating.. cleaned up the mess, did the dishes and went to work..

my "quick" soup is now called refrigerator soup.. if it was in the fridge, it's now in the soup.

now have soup for lunch today, lasagne for dinner, soup for tomorrow.. the same for my honey and even some soup in the freezer..

I think my honey will be making some black bean burgers for friday nite dinner..

I started with a couscous veggie burrito that I picked up at Kroger. I always scan ingredient lists for meaty stuff, but I didn't notice it had olives - and lots of them. Well, I really hate olives so I tried picking at them but then I gave up and had ww toast w/ strawberry preserves. Now, I'm about to go to Pei Wei with a friend. I suppose I should check their nutritional chart online and remind myself which things are egg & dairy free.

Got up really late today so had to give up my usual oatmeal-apple sauce. Instead I had:

1. Organic Bhakti chai with a splash of unsweetened organic almond milk.

2. Raw Revolution Organic Rasin Bar

For lunch, I have packed some Cauliflower and peas sauted in water (no oil) with some Indian spices (turmeric, cumin seeds, mustard seeds, coriander powder and chilly powder) and 2 slices of Ezekiel Bread yumm! Very Happy

3. Haven't decided what I am going to cook for dinner tonight. But since its my last working day, I hope to get some exotic cooking done!! Very Happy

It's only 10:00 a.m. here as I write this so I'm just getting to breakfast now (been up for a while but I'm not one to eat right away...bad habit I know)

I'm having steel-cut oatmeal with half an apple, 1 tbsp of ground flax seed and a tbsp of peanut butter. My cupboards are bare (and so is my fridge since I just cleaned it out!) so have no walnuts or cinnamon for my oatmeal (left them both at work!). Must go shopping..!!

I am using a gift certificate for a full body polish and scalp massage this afternoon so plan on taking a berry smoothie with me for my lunch so I'm not tempted by the Starbuck's next door.

Dinner is yet unknown, but love the sound of that veggie soup with barley (a favourite grain).

Thanks for starting this thread, CCH! It's got me thinking about what I'm going to put in my mouth today!

oh this is fun to see what people are eating!

Tinabean.. pei wei is one of my favorite places.. i am so happy to see a place offer brown rice! Also you can get food prepared "stock velveted" so it is not fried in oil..

Vegan Kitty you must be very small.. i would be starving after that lunch.. i would have to dip those veggies in hummus .. I can't wait to find out what exotic cooking is!

Mariberry.. I love my frozen berries in oatmeal.. along of course w/walnuts & flaxseed. I am amazed at all the stuff you can throw in oatmeal! I was always a cereal & milk girl. I never even put anything besides a banana in cereal.. and then the cereal had to be cheerios. Food couldn't touch and no mixing.. Now i mix cereals and throw fruit & nuts in almost anything.. how we change...

Look at the variety within this thread alone! It takes the "what is left to eat?" punch out of the omnivores objection, doesn't it?

Here's me today so far:

Brekkie: multi-grain muesli with sliced bananas, brown sugar and rice milk


Mid-morning: handful of salad tomatoes, giant carrot, 2 mandarins

Right now I'm cooking a pot of barley in the rice cooker to add to yesterday's soup, the recipe of which you can see on my short video here:

oh i am jealous.. tomato and avacado sammie! oh what i wouldn't give for a vine ripe summer tomato right now...what do you use for dressing if any? do you use a whole avacado? does the other 1/2 turn brown?

i can't seem to get past just cutting up an avacado..putting some lime juice on it and chowing down..

also.. i use kitchen basics veggie stock. it's a bit expensive but has a long shelf life. perhaps i will try miso.. kale i heard is bitter. and you don't eat the stalks? i am not a fan of bitter. but maybe i will give that a try too.

I was lucky to score some pretty decent tomatoes from Arizona yesterday - even though I'm in CA! Hard to find one this time of year that tastes like a tomato!

I save halves of avo all the time - just pop it into a covered container and put in the fridge. It'll do fine for a couple of days. If you need longer, just squirt some lemon juice on top.

I smash a thin bit of avo on my sammy to moisten the bread. They are pretty calorie dense, so a little goes a long way. I also will use sometimes salsa, or hummus. If you are eating expelled oils, Veganaise is an amazing veggie mayo.

Well, so far today I've had a veg. breakfast burrito (non-vegan), along with a cup of tea. Not sure yet what I'm cooking for dinner.

However, I am SO ready for the vegan kickstart on Mon, and have been going over the suggested grocery list today.

I am going to have my work cut out for me tho because in Jan my daughter Gabi is going raw vegan for the whole month, I will be doing the Kickstart, and the other person who lives with us is a regular (sad) eater, so the kitchen is going to be an interesting place next month!

I am definitely a big eater but since my vegetable portions are much larger than an aveg size, it fills me up fast! Very Happy Also the bread I mentioned is dense...so that helps too!

Regarding avocado, yep they do get oxidized if left open for long but usually I make a guac or an avocado salad and finish it up all by myself! It tastes really good! Very Happy I try not to overdo it since it is high in fats but normally I snack on walnuts and fruit so I would just skip it on the days I eat avocado!


@Pam, Goodluck with everything! Smile I was juggling with the same situation last year when I would cook for my bf on the weekends but surprisingly, he too has turned into a vegan now.

I use kitchen basics some time. I like it. I've bought this paste stuff from WF. It was pricey and I still haven't tried it, but I justified it by telling myself that a little would go a long way and it wouldn't take up much space in the pantry.

I wouldn't eat kale stalks, not unless I was realllly hard up for some fiber. I used to think it was really bitter when I was a teen/young adult and always made faces while eating it, but when I tried it again in my mid-30s I didn't think it was bitter at all. I really love it now. I guess it's a matter of taste! I use it in PCRM's beans & greens recipe together with black-eyed peas & pair it with a vegan cornbread recipe I got off of a kosher site. Just in case anyone asks, the recipe link is below & it's actually all over the web because it was an Iowa State Fair Blue Ribbon winner. Apparently the girl who won was only 11 at the time.

hi tinabean,
the recipe looks good. I notice 1/4 cup canola oil. it doesn't seem like a lot.. but i know with the kickstart they try to avoid any added oils..
have you ever tried to substitute anything for the oil? I love cornbread especially with chili... maybe i will try it.Thanks!

So far today:
Hulless barley & quinoa cooked in veggie broth
banana
2 clementines
green smoothie

Supper will either be mixed beans over brown rice or
vegan hotdog on a whole wheat bun with mustard and sauerkraut. I have been craving sauerkraut lately and I won't have lots of time to cook this evening so it's either hot dog or left
overs.

Oh - Almost forgot about the 2 handfuls of potato chips I inhaled - Sad

Mmmmm. Soup. I think I will make a big pot tomorrow. I like to make Refridgerator Dump Soup. Just dump in whatever veggies I have in the fridge, making room for new.

I am a McDougaller, so those of you who follow McD may recognize a tater starch theme.

Oil free hash browns with spinach (2/3 potatoes, 1/3 frozen chopped spinach)

A bit of leftover lentil soup

Brown rice covered with cooked frozen veggies (carrots, peas, snap peas, beans, corn, peppers, mushrooms, onions, edamame ... Etc). With low sodium teriyaki. Yum!

Apple, and air popped popcorn

For dinner I am having a big green salad with ff dressing and baked potatoes topped with whatever veggie mix is in the freezer. Probably broccoli, cauliflower.

Maybe some fruit for a snack. I have some frozen peaches and may heat them up, sprinkle with cinnamon and nutmeg. Sprinkle with grape nuts.

And, since tomorrow is a holiday for me, I may indulge in a glass of wine with dinner. Smile

I had a rough night sleeping and haven't had anything but a cup of joe & some water this morning....well afternoon.
I am either going to have some hummus on toast or make some kind of tofu dish.

Yesterday my juicer went nutso on me while making my juice. I didn't even care about throwing it out, but was bummed that it made me waste food. I will say however had the moment been captured on film it would have been classic. I mean how many times does one get the smell of burning plastic & kale as an air freshner, lol.

No, I haven't tried it without the oil. I can say that if you sub out ground chia for flax, your cornbread looks extra speckley, but still tastes great. However, my attempts at substitutions generally leave something to be desired so I haven't gotten that brave yet as to go without oil.

I'm sure there are more experienced dieters on here that are wizzes at that sort of thing and can help us out. I haven't been too hardcore about added fats in the past, but I did reduce them last year. I still had weight creep though, so this year I'm getting more serious.

I've seen the effect of reducing and even eliminating expelled oils in the diet to be quite dramatic over time. After all, it is a refined food stripped of pretty much all nutrition except for fat calories, which are very easily absorbed and stored by the body. So calorie dense is this stuff, it can stop a weight loss plan dead in its tracks. For those without a weight problem, it may not be as much of a problem, though it can still cause circulatory problems. But for those of us who have struggled with weight, this shift in dietary content can make quite a difference.

Here's some info you might find interesting:

Is the fat you eat the fat you'll wear?

When you focus on calories from whole foods, your satiety works for you - empty, fiber-free calories contribute little to fullness, which comes from the bulk and nutrition of food.

cch22 Laughing, well, I can do that too! Wink

For example, stir fry. Instead of splashing oil in the pan:

1) when prepping high water content veggies like onions, I carmelize them first in a hot pan, contantly stirring as they change color and clarity.

2) when the drier veggies are added, like broccoli, carrots, etc. you can add splashes of everything from plain water to sweet wine or saki to Bragg's aminos and keep stirring to keep from sticking.

Let me know what other tricks you might need!
