What I Ate Vegan Today...

I started similar threads on the other Kickstarts I was a part of. It can be a great place to get ideas for your vegan meals and snacks! Everyone who feels like it...please post what you ate vegan today! Some of us are following the Kickstart menu closely, others are using it partially, and some are DIY vegans! It really is inspiring to see what others are eating; it helps to remind you that you aren't alone in this journey...AND you may get great ideas of new things to try!

Plan for Day 1: Breakfast: Soaked oatmeal with strawberries and dates. Snack: Sprout Salad with Grape Tomatoes Lunch: Dr. McDougall Soup Cup Dinner: Green salad, mustard-coated squash steamer bowl, steam-sauted potatoes. Don't laugh at the Sprout Salad! It is one of my favorite summertime treats! We have "The Sprout Sisters" at our farmer's market, and they make an amazing assortment of sprouts each week. This week, I have 3 bean mix and daikon radish. I love daikon sprouts! They taste just like radishes without all the fussiness of topping and tailing. I get a nice bowl of combined sprouts and top generously with orange and red grape tomatoes. If you get a tomato in each bite, there's no need for dressing; the tomato covers that!

I had Tempeh Taco's with Cabbage and homemade refried beans. That was about all I could eat today.

Here's my plan for Day 1 of the kickstart: Morning: oatmeal with honey (I know, it's not vegan, but I prefer it over agave) and cinnemon Mid-Morning: baked chickpeas and peach Afternoon: cauliflower nuked in the microwave with spices and pearl barley Evening: big salad with corn and mashed potatoes with a little ketchup on top Night snacks: high fiber cereal and 2 slices whole grain bread spread with all-fruit jam Djuna

For breakfast: Rice, black beans (from scratch), homemade salsa and onions and peppers. Haven't really planned the rest of my day, but the confetti couscous salad will be in there as well as curried lentils (recipe from the garden of vegan) YUM!!Will probably cook up either kale or collards (from my garden) with red onions (Christina Pirello) or both versions. and I have fruit also. So that is basically going to be my day...

Started the morning with a green smoothie made from kale, strawberries and almond milk. I will follow the kickstart menu for the rest of the day.

Ok, breakfast done and plan for the day in the works! Breakfast: Ezekiel English Muffin with all-fruit jam, fruit from farmers market: peach, blackberries and blueberries Lunch: Whole wheat pita with hummus, shredded carrot, shredded red cabbage, a sploosh of balsamic vinegar Dinner: Fresh corn, watermelon, fresh green beans Snax as needed! Started the day with water and lemon followed by green juice (kale, romaine, broccoli stems, celery, apple, ginger, cucumber). Lunch was tofu eggless salad on gluten-free bread. Snack as needed. Dinner will be zucchini pasta, tomato sauce with medjool date and nutritional yeast, with a side of quinoa. Snack as needed.

I made a lentil and barley soup...no oil at all following the Mcdougall way of eating..then I had a swiss chard salad with lemon and cucumber...feeling full and wonderful....

Breakfast was beans and rice, onions, peppers with salsa Lunch was confetti couscous salad, green beans, grapes Dinner will probably be curried lentils with vegies. Kale with red onions. snacks will be fruit if needed.

Well, I haven't had much today other than breakfast, OJ and sparkling water but last night we made pizza dough in our bread machine (we got it free on Freecycle as we've made a pledge not to buy anything new) and when the dough was ready we divided it into 4 portions, rolled each out into a circle and filled them with pesto, daiya mozzarella cheese, marinated artichokes, green olive slices and peppers and tomatoes from our garden. Then we folded them over, crimped them shut and popped them onto a pre-heated pizza stone at 375 for 20 min. They were the best calzones I have had in a long while and since the dough was mixed, kneaded and did the rising in the bread machine it took almost no work except chopping the veggies. And even better, because we made 4 we have 2 left over for lunches or another dinner later this week. Easy, vegan and gets us out of cooking a second night. What's not to love?

B - Apple Cinnamon Oatmeal S - Banana, Apple L - Small baked potato, scoop of baked beans and huge salad (was taken out by a work collegue as a suprise so best I could do) S - 2x Small wholemeal bread slices toasted (dry no spread) D - Spicy chickpea, roasted red pepper and spinach in a tomato based sauce with brown rice

B: 1 cup decaf coffee w/ almond milk 1/4 cantaloupe 4 triscuits w/peanut butter L: We ate at a restaurant in Phoenix called The Pita Jungle. Falafel in a 1/2 pita w/lettuce tomato pickle and tahini Iced Berry tea - no sugar, no caffeine

Day 1 ended up to be: B: Soaked oatmeal with strawberries and dates. D: Steam-sauteed squash and sprout-tomato salad. S: Air-popped popcorn Plan for Day 2: B: Soaked oatmeal with strawberries, nectarine, and dates. S: Sprout Salad with tomatoes. D: Green salad and steam-sauteed potatoes. I'm loving reading what everyone is doing! I've already gotten some new ideas!

Chiming in a bit late here. Yesterday (day 1) I was traveling back from vacation so it was a bit difficult b: wheat toast with marmalade and PB l: went to Noodles ~ Japanese Pan Noodles made with no oil and extra broccoli and tofu s: A couple of beers with a friend.  d: stewed veggies over brown rice.

Today: B- 1/2 piece of whole grain toast with just a smidge of almond butter. Coffee with coconut-milk-based creamer and no sugar. L.- the rest of my breakfast- chopped fruit(apple, strawberries, grapes) topped with 1/2 container of Wholesoy cherry soy yogurt and sprinkled with very low fat homemade granola (about 3 tablespoons) D.-will have: some homemade soup/stew of onions, celery,carrots,kale, white beans, sweet potato, seasoning, and veggie broth, over brown rice.

Hearts of palm salad: 1 bag Spring Mix salad greens 1 can hearts of palm drained, rinsed, sliced 1 seedless cucumber peeled and sliced 2 tomatoes quartered Toss with some kind of vinegarette

Today was a travel day B- bowl of oatmeal with 4 prunes and craisins, banana and some orange L -(in car) basmati rice burger with pinto beans on pumpernickel toast, with hummus, tomato and garden greens and spicy mustard, grapes, carrot sticks D- (at airport waiting for plane) leftover tofu and stir-fry from last night; 1/2 of a Kind bar S - apple
