My husband pleads "No More Beans!"

He's a vegetarian and has been for many years, but I guess I've been feeding the poor guy too many beans. I made a white bean rosemary soup the other day and we ate it every day until it was gone. He's been getting bean-and-grain salads in his lunches. We had black bean soup last night at dinner. Today he is complaining of a bloated, uncomfortable stomach and I have to admit, I am bothered too. So I am avoiding beans today altogether. I guess I'm going to have to re-think my menu plans.

You can get all the nutrients you need while eating less beans if you so choose. Shouldn't be a problem. Do you enjoy foods such as tofu or tempeh? Could make for a whole bean substitute.

maybe have grain and veggie meals alternated with the beans and grains. Since we don't eat tofu, we've been eating beans once or twice a day for the last few years so it hasn't been a big issue for us so far. As you mentioned, we use leftovers from dinner for lunches, so I may have veg chili for lunch and then a black bean patty for dinner some days. I think it's also important what veggies you've got alongside, and not just beans-and-grain meals. Plus, need to make sure there's plenty of water and high-liquid fruits and veggies (melon and lettuces and such). --Deb

Beans are so easy and fit in with so many cuisines that I've been relying on them. I do have tofu and tempeh in the house, as well as many other foods I can make. I think I just got a little bit carried away ... I have a spaghetti squash and might make that tonight with some spaghetti sauce and a salad.

haa haa i do the same thing.. make something and eat it till it is gone.. BUT sometimes.. i freeze part of the soup and then i can alternate quicker.. also the frozen soup/chili works to take for work lunches; just don't forget it.

what we do is make a meal (veg chili for example - that's a favorite). The leftovers become lunches and the next night is a different meal (brown rice and veggies for example). The leftovers again are packed for lunches. The thing is, by the third day, I can choose leftover chili or leftover rice'n'veg. That night is a third dinner meal (maybe a hearty veg soup made with quinoa). The fourth day, I've got a whole variety for lunches. Then, weekend dinners are clearing up any remaining leftovers from the week and we start over again. That way, we're not eating exactly the same stuff meal after meal after meal. That's also one thing I like about this kickstart - we're getting new recipes to add into the repertoire (the carrot soup is going to be a regular on the winter menu!) --Deb

Unfortunately for me, I have no way to reheat anything for lunch at work, and I find that thermoses just do not keep soups etc. hot enough, so I opt to make the grain and bean salads. I'm going to have to come up with some alternatives, though. <sigh> My firm does not provide a microwave and I am told they had one before I was hired, and it kept blowing the circuits, so they were forced to get rid of it. Yeah, I work at that kind of place.

maybe more veggies less bean? Alternate grain and bean lunches with a veggie and hummus wrap (for example). Yeah, I know that where I work is unusual - there are two full kitchens (fridge, microwave, stove/oven, dishwasher), one half kitchen (no stove/oven) and one "quarter kitchen" (no stove or microwave). They also have a huge solar panel to help provide electricity, have been using hydrothermal wells for heating and cooling for years, have compost bins in each kitchen (and a big compost barrel out back to empty them into), recycle bins in all the kitchens, and used low VOC/green materials for the construction of a new wing on the building a couple years ago. --Deb

Love the title.. i heard this.. kinda.. i made black bean brownies when my husband went to bed.. when he got up I told him there was a surprise for him in the kitchen.. i made him something special.. He called me later to say hi..and to say the "brownies" were good.. he wanted to know what was in them, and "please don't say beans" so i told him bananas, cocoa.. yes dear and beans.  i took them to the last party... another vegan suggested that next time i make em.. to put coconut and/or walnuts in them. I think that is a GREAT idea.
