What R U eating today-Sat April 9th

HI All, So today is exciting for me. For dinner we are having both of my husbands sisters & their husbands over for dinner. I am making the Kung Pao Tofu & green salad. Then we are taking off for ballroom dance lessons. I am thinking chacha and swing. They know we are vegan so i didn't have to tell them. They can figure out it won't be standard fare. One of his sisters & husband are vegetarian. The other sister & maybe her husband at least has an open mind. Well they are coming! b-cereal, bannana l-tacos made with leftover red beans salsa & rice. d-kung pao tofu, salad & a blueberry crumble So what's up for you??

I have a ton of cleaning and stuff to do today. My sons birthday party is tomorrow and the inlaws are coming over. So I need easy meals. B- oatmeal with raisins and cinnamon L- Salad and steamed asperagus D- something with black beans

B: usual cereal, plant milk, chocolate chips L: probably leftover lasagna (filling is mostly vegan - pesto with parmesan though, using up what we made last summer) D: maybe leftovers, not sure S: catch as catch can - had a late breakfast so I won't likely need a morning snack (since breakfast was at the time I usually have a snack) and we've got an afternoon event to be at so I'm not sure how that's all going to work out --Deb R

B: Tofu scramble and some leftover potatoes L: Bean burrito D: Veggie fajitas (basically just a mix of peppers, onions, green beans, mushrooms, tomatoes, lettuce and avocado in a tortilla) Yum!

Hey everyone!!! Weekends are usually when I dont follow timings to eat. I got up super late (read 11 am) So I thought rather than having breakfast, I'll do some sort of a brunch. So currently eating 2 veggie burgers with ezekiel bread, mint chutney and onions and tomatoes. Then I have to start cleaning the house. Once that is done, if I have time I'll cook vegan lasagna (lasagna noodles are brown rice noodles). I dont care for soy based cheese so lots of veggies, homemade marinara sauce and its good to go!

They really piled on the spinach - I think that maybe so few people ask and once it's on the "line" it has to get used or it's tossed. So, both hubby and I got spinach on our respective sandwiches and they just put handfuls of lovely dark green leafyness on there.--Deb R

B - oatmeal with a teaspoon each of chopped walnuts, raisins, maple syrup; coffee with rice milk S - slice of bread with fruit spread L - veggie chili, 1 oz baked tortilla chips, apple D - small salad, sauteed portabello mushroom, asparagus, yam, pear S - ??

B: oatmeal with frozen mixed berries Midmorning smoothie made with romaine lettuce, frozen blueberries, 1/2 frozen banana, cocoa powder, and vanilla rice milk...didn't taste any lettuce. Lunch: Kickstart Easy Bean Dip and pita bread; sweet red pepper slices Dinner: Kickstart Easy Stir-Fry and Always Great Brown Rice- I am stunned at how delicious this tastes. Wow!! I used Bragg's Liquid Aminos instead of regular soy sauce. This is my 2nd kickstart and I couldn't get to all the Kickstart recipes the first time so I am happy to try more. This Kickstart is going easier for me cooking-wise because it helps that I have more spices, foods, etc. on-hand, and I am more familiar with more foods ex.(never tried kale before 1st Kickstart and I am very glad I did). I never ate black-eyed peas before this kickstart and found them to be surprisingly great. Its well-worth it to give new foods a try.

HI all. Chiming in a day late. No time to reply yesterday. Not because I was terribly busy. I spent the day walking my dogs (3 times, it was so nice outside), and working a jigsaw puzzle that I opened on Friday evening and have become obsessed with. b: hash browns with spinach and onions s: banana l: garbanzo bean salad on deli round toasts with lettuce. Tortilla soup. s: popcorn and beer at a local pub with a friend. d: baked potato topped with steamed fresh veggies and sprinkled with nutritional yeast. I was a lazy cook! But Sunday I am making my favorite Bean Pot Medley in the crock pot.
