Hi VK,
I'm not sure who said "Vegan cuisine is mostly considered bland and not quite appealing to the palate." I've never heard that. For the most part, the vegan food I've encountered is far more exciting and varied than anything I ever saw in my omnivore days.

That said, I'm curious to see more recipes. What types of foods do you like to cook? Do you have favorite ethnic cuisines or varieties of foods? Any favorite vegetables?

This is mostly a remark that I have got from my colleagues, co workers who think that way. Obviously, it is not my personal opinion since I loveeeeeeeeeeeeeeeee everything about veganism! Very Happy I like to cook all kinds of food. I am originally from India so I also 'veganize' a lot of Indian recipes but I also like to cook mexican, italian food basically anything which I can load up with lots of fresh ingredients!

Favorite veggies are: kale, collard greens, spinach, fenugreek, all types of beans, lentils, all kinds of fruits..basically everything in whole food forms. I have been a vegetarian all my life so being vegan was one step further and I am totally enjoying this experience!

I love indian food, as well! Ok, not the ghee part. Wink I am about the same as you with whole foods and loads of fresh vegetables. Can't get enough of them. This kickstart, I want to learn to use more root vegetables and whole grains, and less flour-based products.

I've never had fenugreek. How would one use that? Do you have a favorite recipe? THAT, I would like to see!

Hello MH!
Yeah, I do have a couple of recipes for fenugreek to be included in our diets. Like kale, it surely does have a bitter taste so maybe the first time one tries it out, it would be kind of strong. But with the right amount of spices and of course by acquiring a taste, you can enjoy this wonderful green! Smile

I agree with you on "ghee". Indian food is not the healthiest in the world but since I have learned to make minor changes in the way I cook, I can still enjoy it and not feel guilty.

In my coming posts, I'll include a few recipes I make at home (with fenugreek as well) Maybe as the kickstart proceeds, other people will start posting their recipes and it will be awesome to share ideas with one another!

I enjoy asian/indian foods alot, esp. thai, so if you have any recipes to share, I would love that!

While we're at it, I'd like to pass on a salad dressing recipe that I got from Martha Stewart sev'l. years ago which I love:

Miso dressing. Mix together
3/4 cup miso
1 T sugar
ses. seeds to taste
1 T soy sauce
1/4 t. ses. oil
2 T mirin
hot water added to thin to your desired consistency

Vegan Kitty: I grew up in Denver! I love the area, but haven't lived there in years. I am over in northern CA, on the Pacific coast. Cheers!

Pam, that dressing sounds wonderful. I am definitely going to give it a try. Wow, you grew up here that's so cool but I bet California is as fun as Colorado! I'll be happy to post more recipes in the coming days. Cheers!!
