Last night I became restless for some chocolate dessert

Got my brain going and created this amazing vegan chocolate pudding

LOVE this recipe….It is also high in Protein.

EASY & FAST VEGAN CHOCOLATE PUDDING
1 (12oz) silken tofu container
5 tablespoons of Cocoa Powder (unsweetened)
3 tablespoons of Soy milk
1 teaspoon of vanilla extract
1/4 cup of sugar (or agave / Splenda/ Some Stevia)
1 banana (optional)

1) Put everything in a blender for 1 min (or until all is mix well and smooth)
2) Pour into 4 ramekins
3) Cool for min of 1h in the fridge

Enjoy alone or with some Soy whipped cream for total decadence

It does sound good - I'll have to dig up the recipe hubby found for a vegan chocolate pudding that doesn't use tofu (since soy and I aren't BFFs)

Bugsmom

you could use 2cups of Rice or Almond Milk (I recommend Silk brand) instead of the tofu

But you would have to warm it up and use some Corn Starch to thicken it (probably 1 1/2 tablespoon).

That could be very good also

Yes, the recipe we have uses corn starch and we use almond milk. I told myself to jot it down to post here but forgot over the weekend
