Everyone is different, but you will most likely find that you have MORE energy for exercise. Take a look at some of the triathlete vegan videos you can find on Youtube.
If you are cutting out processed sugary foods cold-turkey you may have a couple of down days as your body gets over it's addictions, otherwise you should not have any trouble exercising as you like. If you are preparing lowfat whole foods fromt the recipes, you can eat as much as you like.
