Alicia recipe for sweet potato and lentil stew

Calls for 1/4 cup of oil. Seems like a great recipe but, can someone speak to the oil?

OMG! I would just do the steam saute thing and forget about the oil completely. Very strange recipe for a low-fat program!

When you go to her Kickstart page, the recipe is there. It is surprising and I would not use the oil at all!

This has come up during every Kickstart. Wink

It's because the recipes provided by the celebrities are not custom-tailored to the Kickstart guidelines. They are simply vegan recipes that are favorites of the celebrity. The assumption is that you, the home cook, will make the adjustments necessary to keep the meals low-fat and healthy.

I have been making veggie stews the past few months (its been winter here in new Zealand) with lentils and/or black beans as a base and adding whatever veggies I have to hand e.g. carrots, mushrooms, sweet potatos, etc. No oils at all so I think it would be fine to leave it out.

I have also tried a couple of different recipes for vegan burger patties and substituted the oil with unsweetened apple sauce. That works well.
