Day 13 cornbread muffins. Awful!

I know it's a day 13 recipe but from the previous Kickstart, has anyone made these? I made them and they were awful, threw them away! Maybe others had a better experience?

I made them a few weeks after the last Kickstart, and I really like them. They may not be for you... or, maybe it was just too soon.

I freeze them and pop one into the toaster oven to accompany many meals, soups, chowders, stews.

They are solid, that it true, they ARE almost solid fibre! Try not to think of them as a "muffin" if you are expecting that to be light and fluffy. So much is in the expectation. I wouldn't find shortbread too hard or dense (if I still ate it that is Smile, but we expect muffins to be light.

Try googling "blue ribbon vegan cornbread" if you're looking for a tastier recipe (less fiber, though). I forget the name of the girl who authored it, but it's been reprinted all over the internet and supposedly really took the ribbon at the Iowa State Fair one year. It's the best-tasting vegan cornbread recipe that I've tried so far.

Wow, tinabean, that cornbread sounds wonderful! From several of the sites it mentioned that the person who came up with the recipe was 11 years old and wanted to eat vegan.(Who knows if that is actually truth or legend! It won several years ago.)

I didn't like those muffins the first time I tried them, either. Now, I think they're just okay. I just take our favorite cornbread recipe and veganize it by substituting ground flax seeds + water for the eggs and vegan "butter" for the butter. Comes out great every time and even my husband can't tell it's vegan. Laughing

also, if you can get freshly ground corn meal, you can virtually eliminate any sweetener in any corn bread recipe (unless you want a touch of sweet for other reasons). Most cornbread recipes use at least a little sweetener of some sort because the oil in the ground corn has been sitting on the shelf getting old and bitter. Freshly ground (especially if you use good quality popcorn) is really SWEET and doesn't need more sweetener (again, sometimes a little sweeter makes a good contrast for whatever it's being served with).

I've tried the blue ribbon with a little less oil, but I've never tried it without. I'm not sure what the difference would be or what substitutions are good for oil.

I think applesauce would sub for oil for something like cornbread (The unsweetened just-apples kind). Not sure about relative proportions.

what about soy yogurt or even vegan sour cream or maybe even some silken tofu to give it the creaminess and moisture. sometimes they come out so dry..

You can just use the same amount of unsweetened applesauce instead of oil - I do it all of the time. Wink Not sure about applesauce in cornbread but I'll bet it would be pretty good.

You can also use canned pumpkin (NOT pumpkin pie filling - just straight pumpkin). Again, use the same amount of pumpkin instead of oil. I have done that in cornbread before and we liked it. Just makes the cornbread a darker color.

I also thought the cornbread was awful. I looked for an old-fashioned southern style recipe, because I wanted mine to be unsweetened. I found one that did not call for eggs or sweetener. I had to substitute soy milk for buttermilk, and oil for bacon grease.
