Question about Kickstart Menu

Hi,
I have been a vegetarian for 20 years and I am trying to go vegan. I love the kickstart plan!
One question - in the meal plan it suggests toast, waffles and whole grain pasta. But those are made with eggs and milk! Did they mean vegan toast?
The menu should say that. I wouldn't want new people to go around to diners and say their vegan when they are eating all sorts of foods that contain animal products!

Bread is usually vegan. Dairy by-products may be added as fillers to make bread cheaper, so do read the label. You will also find pasta (if not labeled "egg noodles") is usually vegan. Waffles are not typically vegan - you would have to seek those brands. A mainstream restaurant probably would not have vegan waffles.

Once you know what brands fit the bill and that you like, it's easy to choose them all the time!

I think the biggest thing holding me back was that I love bread and couldn't imagine living without it. Eggs are hard for me, too, but not impossible.
Do you have any suggestions about going vegan for a person with tree nut allergies?

also, for some reason I can eat plenty of soy (edamame, tofu, etc) but soy milk makes my throat really itchy and I can't drink it. I use rice milk, but it just doesn't work so well in coffee or tea. I can't use almond milk (nut allergy). Any other suggestions?

No worries if you can't eat tree nuts. The same nutrients are found in other plants, in varying amounts.

As for coffee, some people like hemp milk. It does have a distinctive taste, however.

I was a bit surprised when you were concerned initially about eggs and dairy in bread. But then I realized that most grocery store breads do have assorted milk powder type additives. We make our own and, when necessary, use plant milk (we prefer almond though I know that's out for you). Mostly, hubby makes bagels and flour tortillas instead of yeast loaves. Bagels in the winter and tortillas year round (bagels heat up the kitchen more - not good in July with no a/c!)

Funny story: a few months ago, we were travelling and went down to the hotels complimentary breakfast buffet. Sitting side by side next to the toaster were two racks: one with white bread and one with "wheat bread". My son (12 yrs old) pointed to one, then the other and said "what's the difference between these two things?" I said "well, that's white bread and that's wheat bread" He looked at them and shook his head and said "no, it's white bread and beige bread!" At 12, he's quite the savvy consumer as far as ingredient labels and nutrition.
