I made this tonight and EVERYONE - including my picky 15 year old daughter LOVED it!

I'm really bad about venturing out to try new foods and flavors (thank GOD for veggie chick'n nuggets - I know, I know, no lectures please, I am moving away from them, albeit slowly!!) but I'm so glad I tried this! Smile

I was going to make the lentil, artichoke stew last night but ended up making a big pot of veggie soup instead. Good to know that it's a hit! I'll make it soon. Very Happy

Best Vegetarian Chili in the World

I just feel i have to share this recipe.. i have made it often, even before vegan.. everyone likes it.. you can substitute dry beans & fresh tomatos for canned when in season. Also I find myself adding different types of pepper for layers of flavor. chili powder, cayanne pepper, and mexican chili powder.
I also use water now instead of oil and just leave out the crumbles.

Best Vegetarian Chili In the World
1 Tbsp Olive Oil      
1/2 Medium Onion
2 Bay Leaves         
1 tsp Cumin
2 Tbsp Dried Oregano      
1 tsp Salt

Chopped:
2 Stalks Celery      
2 Green Peppers
2 Jalapeno Peppers   
3 Cloves Garlic

2 (4oz) cans chopped Green Chile Peppers, drained
2 (12oz) packages Vegetarian Burger Crumbles

3 (28oz) cans Whole Peeled Tomatoes, crushed
1/4 cup Chili Powder      
1 Tbsp Black Pepper
1 (15oz) can Kidney Beans, drained
1 (15 oz) can Garbanzo Beans, drained
1 (15oz) can Black Beans
1 (15oz) can Whole Kernel Corn

Heat olive oil in a large pot over medium heat.
Stir in onion, bay leaves, cumin, oregano, and salt.
Cook & stir till onion is tender, then mix in celery, green peppers, jalapeno peppers, garlic & green Chile peppers. When vegetables are heated through, mix in crumbles. Reduce heat to low, cover & simmer 5 min.

Mix in tomatoes. Season with chili powder & black pepper.
Stir in all beans.
Bring to a boil; reduce heat to low, simmer 45 minutes.
Stir in corn & continue cooking 5 minutes before serving.

Top with red onions, jalapeno slices,and/or sliced black olives.
