How can I make a recipe into a vegan recipe?
Posted Monday, March 8, 2010 at 1:59 AM

I have a recipe for a cranberry walnut breakfast cookie. But the recipe calls for egg whites. How can I make it vegan? I know you can use apple sauce instead of oil.

Could someone help me pls.

Thanks

There is a product called EnerG egg replacer, found in the baking aisle. It has directions for substitutions. If the egg is a binder in the recip this works well.

Ground flaxseed also works to replace eggs. Mix 1 tbsp with 2 tbsp water and mix, let it sit until thickened.

If the recipe calls for an egg wash (on top of baked goods) brushing soymilk or another plant milk works.

A lot of vegan sites have lists of substitutions, as vegan cookbooks. There's a good one at PPK Post Punk Kitchen.

Ground flax seed is also a good substitute. The exchange is 1 Tbls. ground flax seed to 3 Tbls. hot water, let sit until it gets slightly thick. I use this a lot in savory dishes, like bean burgers, also.
