DNA testing

Please don't think this is a ridiculous question, I am brand new here and would just like someone with medical knowledge to respond.

I have had DNA testing which showed that I am very sensitive to gaining weight with excessive carbohydrates, I also have a wheat and soy sensitivity. That being said, I very much am wanting to become vegan, for health and moral reasons. Any advice on things I should avoid while trying to change to a vegan lifestyle? I would really appreciate any thoughts or ideas. I love almond milk and make my own, so missing out on soy milk is not a huge loss.

Hi there,
I don't think your question is ridiculous. Smile And we were all new once!

My first thought: We all gain weight with an excess of ANYthing!
Whether it's carbs, protein, or fat -- if you eat too much, you will gain weight.
But I think I see where you're going...

Most of the Kickstart recipes focus on whole grains, if they use grains at all, and you can always substitute the others (Whole wheat bread for white, for example, or brown rice for white rice). You are *much less* likely to gain excess weight from whole grains and healthy low-glycemic carbs than from white flour, sugar and high-glycemic foods.

More important is to remember that carbohydrates are your body's preferred source of energy. They are what the human body is designed to run on. If you deny your body its fuel, then your body will not function well. (I found this out the hard way after 5 years on a high-protein South Beach style diet.)

I also have trouble with wheat/gluten and when I'm really careful about staying completely away from it, I will immediately lose weight. Finding other carb substitutes....like brown rice bread et.. There are some good gluten free breads out now, but some contain some dairy/eggs. Some recommend Sprouted wheat bread, which is "flourless" and supposed to be eaiser to digest. For me it still acts like regular wheat in my body.

When I did the Vegan plan diligently, staying away from most wheat & gluten. I lost quite a bit....even when eating a lot of the wheat free carbs. So at least give it a try. I think you will be surprised.

If you Google "Gluten Free Vegan" you will find a lot of good information/cookbooks.

*****I recently discovered a new wheat/gluten free spaghetti that I passed off on my husband. It was awesome! It's made by De Bolles, that is made with Jersulem Artichoke Flour.....which I understand is supposed to be better for diabetics too. Maybe lower glycemic index & I think supposed to be a higher in protein?.....might want to check it out furter yourself. It was the best tasting gluten-free pasta I've had! Took some of the leftover cold pasta the next day and made a salad for lunch. Cut up some of my garden tomatoes, cucumber, little black olive, garbanzo beans and some Italian dressing......Yummy!!

I have celiac disease so I cannot have wheat gluten rye barley excetera. There is a website called vegiac.com. they have a lot of recipes you may find helpful.
