HELP I need help help help

As I mentioned on here before I am happy to say my mega meat and cheese eating husband is doing the 21 days. We started a few days after everyone so we still have about a week to go. He owns his own courier company and it is struggling so he now has to be a driver for it. That means he won't be in the office as much as he was before and lunches to be warmed up are going to be hard to manage. Do any of you have ideas for portable lunches that don't require a microwave or a cooler?

He said other than the stress of lunch he would do this all the time but stopping at a burger place is so much easier. I have had him go to Subway to get a veggie sandwich or Quiznos for the same but that gets boring and he thinks they are bland and dry.

HELP I don't want him to give up before the 21 days is over.

An insulated thermos is how I do hot lunches at work. Get him a big one. Heat a hearty soup, stew, or chili in the microwave in the morning before putting it in the thermos. It will still be warm at lunch.

In a separate container pack additional cool or room-temp things like salads and veggies or a whole-grain pita or roll to round out the meal.

Hope that helps! It works for me and it's actually always more satisfying than whatever I can find at the deli.

Subway's veggie sandwiches are much better with the Italian dressing that I carry with me. I also make sandwiches with whole wheat bread, refried beans, tomatoes, lettuce, pickles and spicy mustard. I carry fresh fruit, grapes, apples, clementines, bananas. LOVE peanut butter and banana sandwiches. Pretzels with spicy mustard make a good snack. Wendy's has a great baked potato, take your own salad dressing or salsa. Single serve applesauce. Larabars are vegan and VERY filling, often time is a great way to get me to my next meal. You have to be creative.

If you can convince him to carry a small cooler there may be even more options.

Yep, gotta think ahead and plan. I like quiznos. Qdoba, taco bell has the cheeseless fresco menu, quiznos has vegetarian soups (overpriced tho), ruby tuesdays has a good salad bar, and Moe's southwestern even has tofu as option with their fast fresh mexican menu.

Many grocery stores even have salad bars. Amy's frozen foods have vegan options, but i dont know about the salt content. McDoughalls has soups, i believe ramen noodles are vegan, thai kitchen has to go soups. Indian restaurants usually have good veg options. Even sushi you can order with avocado, rice, cucumbers, etc.

I make about two lbs of hummus weekly which goes well with veggies, on bread with lettuce, tomato, etc (i woud add tomato at time of eating). Tabouli is easy to make and keeps well.

Whole fruit, even canned, is easy to eat while driving. Frozen grapes. Pasta salads with black beans, red onions, italian dressing, cilantro, carrots, celery, etc. Easy to make ahead of time and carry.

Mcdonalds has salads you can order vegan. I dont think burger kings veggie burger is vegan tho, but is a good option in a pinch.

I understand the frustration in learning a new way of eating, but if you both want it, it can be done. You can even save a great deal of money by making homemade meals.

Search out your library for vegan cooking books and try some things. I am going to get one re vegetarian pressure cooking.

Overall packing a cooler and thermos seems key along with fruit and veggie snacks.

Baked potatoes are great for a portable lunch or snack because they are filling and taste good at room temperature. Sprinkle them with pepper, paprika, or whatever spice you like. Whole grain crackers are also portable - check the label for no dairy products(even Triscuits and Wheat Thins are ok in most flavors). Try a sandwich made with "meat analogue" slices. While these are highly processed, they are good transition foods. Be sure to use whole grain bread so it is more filling.

I eat lunch all the time out. My favorite is a healthy burrito with "mega soy." But, not all can be found like in NYC. I stick with salads when traveling - add veggies, beans, etc.

Why no cooler? There are great smallish insulated lunch bags/boxes that can keep quinoa and bean salad safe for hours. Agree with the thermos suggestion, especially this time of year!

Aviva's got a good idea. I take a small insulated cooler to work most days. That said, don't forget that eating choices are a very personal decision (and habit). You can make it easier for your spouse, but you can't manipulate him into veganism. That's reality. Smile Have courage to continue no matter what anyone else does. You'll be glad you did!

Thank you all for your suggestions. He caved and decided he would do a cooler so that helped a lot. He has had sandwiches, smoothies and soups. He is looking great and I'm hopeful that he will stick with the diet at least 90%

I would try cold vegan salads made with rice or couscous.. My husband and I usually cook a pot of beans and rice at the start of the week, as well as buy frozen vegetables. Each morning, we put the beans and rice in a glass container, with some of the frozen veges. The veges keep it cold until lunch time and then it is ready to be eaten without having to refrigerate it or heat it up.

I also like cold whole wheat pasta salads with lite italian dressing, black beans or chickpeas, red peppers, celery, carrots etc. I make a hige container for the week and usually put in whatever is in the fridge along with a goodly amount of red onion. Very good!
