Easter Menu

Easter is at my house this year. Not too much company coming and I got my parents doing the kickstart. Here's the start of my plan --- any ideas or suggestions? What are you planning? Vegetarian Lasagne (a favorite of vegetarians and non-vegetarians alike) Ham and Kielbasi for the kids and hubby Salad Gooey Oatmeal CC Cookies Vegetarian Brownies

This is my planned Easter menu. Some sort of meat that my son will prepare ( I am the only plant based person). Fat free potato salad (no one has ever noticed) Fat free cole slaw Baked beans ( I use a recipe I found on the PCRM's website a couple of years ago) Large veggie salad with assorted dressing available A spring time fruit salad (a variety of melons and berries - whatever looks good at the market) Sweets - guests will bring them MY plate will be vegan and I will not miss the meat. As a matter of fact, no one will even notice.

How do you do fat free potato salad and cole slaw? I've never had those fat-free before! With vegetarian lasagna, you could pretty easily make it vegan using a tofu ricotta or a cashew cheese. Might be a fun experiment.

We just last night finished off our almond ricotta, black bean and spinach lasagna. Hubby found the almond ricotta recipe online somewhere (not sure where but google should find it). Easter dinner will likely be at the ILs yet again this year - most likely the "usual" ham with pineapple gravy, mashed potatoes, white flour biscuits, maybe a green veggie. Haven't yet heard anything specific so maybe it'll get overlooked and we can just relax at home. I doubt it. I figure we'll just make something that passes as a "side dish" that we can eat as the main dish as well (the way mac'n'cheese can be either side or entree). We typically make sure to eat at least a little something beforehand so that if all that's available is salad, that's enough. --Deb R

Hmm that could work - the quinoa chickpea pilaf with some green leafies mixed in (we usually cook them separately but then they kind of mix in the bowl). Yes, I think I'll suggest to hubby that we bring that "side dish" along for Easter. --Deb R

Do you mash the beans? use fresh spinach? is this all with a tomato based sauce then?? Sounds soooo good!

Sounds soooo good! We use a pastry blender (the hand held kind) or fork to roughly crumble the beans so it looks kinda similar to browned ground meat - you don't want totally mashed. Then we either use fresh (lightly sauteed) or frozen (and cooked) spinach depending on what's available. If using cooked frozen spinach, be sure to squeeze it out really dry so it doesn't get sogginess into the lasagna. We take a can (or two) of no salt no sugar added diced tomatoes, whir them in the blender or food pro and add seasoning. Haven't tried leaving the tbl of oil out yet - we figure that one tbl of oil for a whole pan of lasagna comes out to a very small amount per serving (we usually serve it with a BIG tossed salad!) Our next 'adventure' is to try eggplant rollatini - slice the eggplant into thin strips similar in size and thickness to lasagna noodles, then plop on a dollop of the not-ricotta filling (seasoned and all with herbs, maybe spinach), roll it, top with sauce and bake. Kind of like an enchilada casserole (we've got an awesome recipe for that as well!) --Deb R

ohhhh, thanks for more information Deb! I am MAKING it! Maybe that will be OUR Easter dinner. DH will be impressed and excited to see some Lasagna. Although the other recipe SOUNDS good - sorry but I detest eggplant . I usually buy one every summer because they are soooo pretty but I never cook it or eat it. I get shivvers just thinking about doing so. Maybe the same method though rolled up in a corn tortilla or stuffed into a pasta shell.

You can do the same with lasagna noodles - cook them so they're pliable then roll around the filling and bake (like manicotti). I'm not an eggplant fan but I had the eggplant rollatini not all that long ago at a local Italian restaurant and it was REALLY good.We do the enchilada casserole a few times per year (roll a thick chili like mix of black beans, rice, diced tomato, seasoning, into a whole wheat tortilla then top with the not-cheese sauce and bake) --Deb R

Molly Horn asked about fat free dressing for coleslaw and potato salad. I make a dressing similar to some I have found at fatfreevegan.com . I make a tofu mayo. It has silken tofu,mustard, cider vinegar, sugar, and lemon juice. Go to SusanV's fatfreevegan.com site and you will find some wonderful recipes. I add pineapple to my coleslaw so it is kind of sweet (my DH loves pineapple, raisins, and apples added to the slaw). The potato salad is just like my mama's (potatoes, celery, onions, pickles, extra pickle juice and the tofu mayo and maybe extra mustard.

Oh, very smart! Yes, I've seen that tofu mayo before and even used it for "chicken" salad – I just never thought to use it on anything else. Haha! Thank you for the great ideas.

Seitan Bourguignon (was on the Martha Stewart Show) Mashed potatoes Baked carrots Salad of some sort Not sure what else. My mom will probably make some meat for the rest of the family.

We are going to the in-laws. It is about the same menu every time. Almost everything has cheese, meat, hydrogenated margarine, etc. Every thing is full fat too. There is usually fruit salad and baby carrots (although sometimes these are nasty - I am used to yummy organic ones). At the last family dinner, I brought a lettuce salad. I was the only one who would have thought to eat something like that. I usually bring crackers and veggies to snack on throughout the day because I am still hungry after lunch.

We are going to my sisters for Easter. I did all the Holidays last year, so I guess she felt the need, YAY! They are vegetarians but don't do cheese/milk, and they know what I eat, so it should be a nice meal with no worries. Not sure what I'm bringing, she needs to make her meal plan first
