Posted Sunday, April 10, 2011 at 8:50 AM
HI All, *** UT OH*** NOTICE THIS IS SUNDAY APRIL 10TH!! **** OPPS.. Last night turned out to be fun. Everyone enjoyed dinner. At first they said the dish was not spicy at all. Then the Pao of Kung kicked in. It's one of those dishes with an afterburn. BUT it is not a BIG aferburn. It is just a little, but noticeable. It doesn't make you sweat or have to drink a whole bunch of water. So everyone was albe to eat as much as they wanted, everyone thought it was good. Then we took those dance lessons. we learned alot. So today is pretty easy day.. b-cereal l-leftovers d-a brand new recipe... Tofu Stroganoff it has tofu, mashed. Homemade tofu sour cream (probably better for you than store bought) 1/4 cup white wine, soy suce, parley thyme, noodles red pepper, 4 cups mushrooms & scallions. Anyway i bought the mushrooms a few days ago and need to use them. what are you eating today???

Breakfast: oatmeal with frozen mixed berries Midmorning smoothie made with broccoli, frozen blueberries, 1/2 frozen banana, cocoa powder, and Vanilla rice milk. Lunch will be leftover Kickstart Easy Stir Fry and Always Great Brown Rice. Looking forward to it. Dinner out with friends. My goal last week was to eat a variety of leafy green or cruciferous vegetables and every day put a different one in a smoothie. I used kale, collard greens, romaine lettuce, and broccoli. It required no cooking skills and couldn't taste any of them except the broccoli but still tasted great. My goal next week is to eat leafy greens every day but not in a smoothie.

Hi all. Happy Sunday. Cynthia, I am going to try you kung po tofu someday soon. I sounds great. B: chickpea salad sandwich. Hey, sometimes I am non-traditional. A sliced apple. L: leftover spuds topped with steamed broccoli and cauliflower and sprinkled with nutritional yeast. S: small bowl of my Bean Pot Medley that has been stewing in the crock pot all day. D: probably a big green salad with lots of veggies.

B - green smoothie S - raspberries, 1 oz almonds L - oatmeal sprinkled with brown sugar and topped with banana and strawberries, coffee with creamer (non vegan!) S - cantaloupe D - veggie pizza, 1 slice with no cheese, 1 slice with daiya cheese S - ?? Lunch/Brunch was a little bit of a challenge. We ate out and I just couldn't bring myself to drink my coffee black, so I did end up adding in one of the creamers that were on the table. I looked this afternoon and found some soy creamers that I can order online and keep in my purse, so I don't expect that to be an issue again. I also opted for a sprinkling of brown sugar instead of maple syrup because the maple syrup was going to cost me an additional $1.50. Next time I'll probably spend the extra money. I had my first vegan pizza tonight. I bought some whole wheat pizza dough (vegan), and piled on the veggies. I made half of the pizza with no cheese and half of it with daiya cheese. I think I actually preferred the no cheese half.

B- Half a banana L- Steamed brocolli and cauliflower with hot sauce ( I know that raises the sodium but oh so goooood) and 1 cup black eyed peas with hot sauce S- Hand full of dried cranberries D- recipe from the cookbook *brunch black bean burritos* except that I substuted black eye peas instead of black beans...was still very good, but black beans are better I am proud of myself today. We had my son's 2 year party today and I baked a cake. Managed NOT to lick the spoon bowl or beaters. I also didn't have any cake. Everyone said it was very good...which made me want to have a piece even more....but I resisted! I think I will reward myself tonight with frozen chocolate soy milk YUM!
