Vitamin Absorption Question

Hi everyone, I keep having this debate with my mom so I was hoping some of the experts on this forum could clear things up. I've been eating salads lately with just some fresh lime juice and pepper and she insists that I need to add at least a little olive oil (like a teaspoon) because there are vitamins in the veggies that won't get absorbed unless there is fat to help them along. Is that really true or is that just a myth? Also, if it is true, can the little added fat come in different forms? For example, I eat my salad every morning with a homemade hummus that has very little tahina (sesame seed paste) in it (like 1 teaspoon per 1/2 cup garbanzo beans and I usually take about 1/4 cup of hummus on my bread). Would the tahina in the hummus be enough to help the vitamins absorb? Tam
