Hi...are canned beans ok to use ? I am not great at the sorting/cooking, etc.. with dried beans. I find the canned beans and lentils so easy but I have heard some bad things about eating things from a can in general. any thoughts?

Canned beans are fine. I would rinse them first to get as much of the salt off as possible.

ditto. Rinse them thoroughly to get the gunk and sodium and stuff off. If you can buy sodium free varieties, go for it.

Hi Summer,
I keep both canned and dry beans around. Of course I always look for beans with no added anything. Beans and water would be great. Yes always rinse canned beans.

The canned black beans make quick work of dinner when nothing was planned.. just make a black bean burger. add just about anything for cooking in a fry pan.

I have conquered the cooking thing. i just soak them overnight, and cook the next day... I don't really do well with the sorting stuff. I have never found anything to take out? Last weekend i just cooked a one lb bag of black beans and then put them away. I took from the bowl on different days to make burgers, tacos,(tacos went over extremely well-leftover southwestern burgers) and soup. All using the one time cook... then adding different ingredients.

yup, we cook beans once (sometimes twice) per week and then just eat off them all week in different recipes. Right after they're done cooking, we portion them out so that we can just grab one jar (or two or three as needed) and know the portion size since most recipes call for "one 15 oz can" or whatever. They go in soups, pasta dishes, rice dishes, chili, burritos/tacos/nachos, black bean patties.

Yep i suppose right now you could buy glass canning jars to sort them into.. i like storing food in glass.. also if you store soup in glass.. it goes right into the microwave.. one dish to wash.. hubby likes that.

That's what I often do when I bring leftovers to work. I'll bring soup or chili or something in a glass jar and just take off the lid and microwave it. Also, we put the leftovers into the jars while they're still pretty hot (as soon as we're done with the meal) and then let it cool to a warm-to-the-touch state (but not really hot) on the counter then into the fridge. Cooling down with the lid already on causes a bit of a vacuum situation so the lid gets sealed on tight (and I mean tight - sometimes I have to ask one of the guys I work with to open my lunch jar!) Not quite as sealed as if we canned it so it would be shelf stable but pretty close. We just use old washed out peanut butter glass jars and salsa jars (anything with a reasonably wide mouth).

I use canned beans. I try to buy organic with no salt, or at least rinse the salt. I find canned lentils a bit too mushy, and they cook so quickly it's not really much advantage to buy canned. I like to cook hull-less barley with my beans.

I wonder if you are referring to the recent warnings about BPA in canned goods? I have read about that also, it is hard to know what to do with that, the BPA is reportedly on our cash register receipts as well.

All in all, you don't want to, or are unable to cook your own (it would save money and you could use a crock pot), then I would say rinse well and better to eat canned beans than none! Good luck!

I thought we were supposed to rinse the beans to wash away thei "magic" Question I rinse them until they stop foaming, because I think the foamy stuff is from the gassy starches.

I only use the dried beans when I plan ahead, but I've been too busy to plan my work and work my plan so I haven't done that in months. I <3 canned beans.

Thank you! I seem to always be a bit behind on these things!

At my age I'm really out of touch with these things so I've been looking up all the initials.Wink Didn't think to look up the <3. Thought it was a typo. I really need to get into the loop!

Cute symbol. Now I want to use it. Smile

I did read about the problem with BPA in canned goods. Does anyone have thoughts on this in terms of canned beans ?

From ewg.org (Environmental Working Group):

Quote:

Our testing of canned foods found that BPA leaches from the liner into the food itself. Sensitive groups such as kids and pregnant women should limit canned food consumption. Beverages appear to contain less BPA residues, while canned pasta and soups contain the highest levels. Rinsing canned fruit or vegetables with water prior to heating and serving could lessen BPA ingestion.

I don't really know much about the subject, but now I'm going to be paranoid the next time I buy canned soup. Hopefully Amy's is free of the stuff!

Honestly, I've lived most of my life next to a huge petrochemical complex, so I take this stuff in stride. According to The China Study, carcinogens are cancer initiators, but diet is what really determines if those bad little cells multiply and get promoted.

Just had a thought. Wouldn't it make sense for there to be frozen beans (black, pinto, lentils, etc...)cooked and ready to use. I have only seeen frozen edamame. I have not seen any others in my whole foods or anywhere.

I also found that organic canned beans that you find in health food stores tend to have only beans, water, and salt in them without all the preservatives. More expensive, of course, but worth it Smile.
