day one food

hi All, How have people fared with the menu for day one? I make the confetti couscous often in our house. My husband didn't like it with the whole wheat couscous. So i switched to the israeli type. It is bigger and reminds us of tapioca. The other dish i make a lot is the carrot soup. Hey carrots are cheap. Again we did not like the consistancy. Also the time required to roast, let cool and peel red peppers... So what i do now is shred the carrots.. and use jarred roasted red peppers packed in water. No extra salt. Then i do put Some in a food processor to blend for a tomato soup look.. but i leave lots in shredded form. It seems to be more tasty. So the ones who are trying the recipes .. how do you like them? and if you do like them what do you like about them? if you don't like them, what don't you like? Sometimes it's not the taste, but the texture... so how is it for you?

I don't totally follow the menus (we will be having the carrot red pepper soup at some point though - we enjoyed that the first time we tried it from last Sept kickstart). Breakfast: usual cereal and almond milk Snack: nectarine Lunch: potato broccoli soup, tossed salad with balsamic vinegar, toasted bagel Snack: apple Dinner: veggie chili (black beans, diced tomato, bell pepper, corn, onion, seasonings) --Deb R

I made the couscous confitti salad with quiñoa rather than couscous. I may be getting a little extreme, but to me couscous is just pasta, and quiñoa is a whole grain! It was very nice. I recommend trying this change. I have been editing the MEET IRENE - an unlikely vegan doc and found myself on a sequence when we went out to a lovely local restaurant... the editing was making me hungry, so I ate lots of quiñoa confitti salad Even so, I still find the recipe too big for a single person household. - madeline

@ Deb.. yeah it is time to start thinking of chili again. ( Although i make a mean one with 3 types of beans.. I think it is called the Best Vegetarian Chili in the World. lol. easy enough to change it to vegan. @ Madeline.. gee i can't wait to see Meet Irene. Quinoa is a great idea for the confetti couscous. Or is that the one that winds up with the little tail? The tail one isn't so much a favorite.. Maybe i will try the whole wheat couscous again now that our taste buds have changed.

yep, quiñoa is the one with the little tail, sorry. It is a bit "earthy" but I really like it. Funny how tastes are different. - madeline

CCH22: I made that tomato corn salad you posted the other day.. YUM!!! I used basil. Will try it also with cilantro too. Hubby loved it also. I have made the confetti salad. I think I'll try israeli couscous and I do like the quinoa idea. Barley may be nice too. Pretty much any grain I bet, millet, etc. I made a lot of these recipes last time, just haven't had time to do a lot of cooking, usually get started on Sundays, but my son broke his collarbone on Friday so ER Friday night and then running to appt, etc. Probable surgery!!! Anyway, Hope to cook some stuff Sunday and let you know. I remember wasn't fond of the hopping john last time around. it was kind of bland!! I love anything with curry so if any one has any recipes for that, I'll take them.

Breakfast: black beans, diced tomatoes, corn 3 Vitamin D3 400 IU tablets (great idea Deb -veggie chili (black beans, diced tomato, bell pepper, corn, onion, seasonings) I will have to add the bell pepper, etc. next time Thanks for sharing! Snack: oatmeal with cinnamon Lunch: lentils, 1 carrot, brown rice, and baked potato sprinkled with nutritional yeast flakes. Dinner: Smoothie with broccoli, blueberries, 1/2 banana, almond milk, and cocoa powder...tastes like Reese's peanut butter cups! Kwik Kale- easy and delicious Snack: microwave popcorn in brown paper bag for 2 minutes

I made the Hoppin John Salad, Kwik Kale, Couscous Confetti Salad and Carrot and Red Pepper Soup so far. We weren't that fond of the Kwik Kale but thought everything else was delicious.

I made the Hoppin John and the Carrot/ Red Pepper Soup. For the Hoppin John, I followed the recipe exactly. It turned out good. I plan to make this on New Year's Day for good luck. For the soup, I used a 12 oz jar of Mt. Olive roasted red peppers and 2 cans of vegetable stock. Since this added liquid, I did not use 2 cups of soymilk. I added just a couple splashes of unsweetened almond milk to the batches I processed. The texture was a bit odd, but it tasted great.

Can't remember where she posted it but here it is CCH22's tomato and corn salad 4 ears of corn sliced off 2 diced tomatoes 3 scallions 1/2 cup cilantro or basil (I used basil this time) Juice of 1/2 a lime mix and enjoy. I'd say measurements don't need to be exact. It's Super Good!!! Thanks CCH22.

It is Wednesday and I am STILL eating couscous confetti salad! Fortunately I really like it.  Since this is my first Kickstart, I have not been tweaking the recipes too much. I really liked the carrot/red pepper soup, and I followed it to the letter... even roasting my own red pepper over one of the gas burners! I don't know if I'll do that again! It was fun, but scary. I kept hearing these popping sounds from the pepper's interior (exploding seeds?) and I was worried the whole thing was going to pop. Also, the recipe said to keep roasting it until it was ENTIRELY blackened, but I don't know if that ever would have happened. There are all these hills and valleys in a pepper, and the valleys weren't getting a bit of char. Plus it was taking FOR-E-VER and I was late with lunch as it was. So I just went with partially-charred, let it cool, slipped off what pepper-skin I could, and tossed it in the blender with the rest. It seemed like a LOT of work for a little bit of roasted pepper, so next time I might just open a jar.

KansasPerson, I don't have a gas stove, so I roast my peppers in the oven. I put them on a jelly roll pan covered with aluminum foil and put them under the broiler. I usually cut them in half and pop out the stem, center seed stuff and cut the white membrane down close. It is hard to get them charred all over, if they are real uneven, sometimes I will cut them into quarters. You obviously have to keep an eye on them while roasting as they will burn, but you can do other things while you are in the kitchen. You can do several peppers at a time and after they cool and you slip the skin off you can freeze them. editing to add: If you don't get all the skin off it can sometimes add a bitter taste. Pam

So i am just going thru emails and deleting them... yep it has been a while.. sorry it has taken so long to give you this recipe.. Fresh Corn & Tomato Salad 4 Ears of the Freshest Corn you can find 2 medium diced fresh Tomatoes (1 lb) (i use on the vine) 3 Scallions (1/4 cup chopped) 1/2 cup Cilantro or Basil Leaves 1/2 fresh lime (or squeeze to taste from real lime container) (i often use real lime. leftovers can be used for margaritas!) Cook Corn about 5 minutes. Remove & run cool water over corn Slice Corn off cob; scrape cob. (yes scrape the cob.. it gives corn juice into the bowl.) Finely chop Cilantro or Basil. Add Tomatoes & Scallions. Squeeze limejuice over mixture. Toss Well. Serve immediately or refrigerate.

Thanks for the reminder - I haven't made the couscous confetti salad in a while, and it is one of our favorites. I also sub quinoa for the couscous, too. For those who think they don't like quinoa, try rinsing it well first - even if it says it's rinsed already. I thought I didn't like quinoa until I made that minor change in preparation, and now I really enjoy it!

It's one of our favorites too - that and the Hoppin' John Salad. I think both would be a good choice for a pot luck with nonvegans. There are lots of occasions like that coming up with the holidays. Hoppin' John is perfect for New Year's. Deborah
