What R U eating Mon April 11th?

HI All,
One week down? How are all the new kickstarters doing? Are you following the menu plan?
I remember when i was new about this point i seemed to still be eating everything (vegan) and it seemed like a lot of it! Like I was worried i could not feed myself or something. A little while longer and it balanced out. So what is happening with you new kickstarters? How is it working out so far? What is going on?

Today is supposed to be in the 70's. I just hope it stops rainning. I have today off and would like to go for a bike ride.

b-cereal, bannana, coffee w/soymilk
l-leftovers
d-leftovers

i don't have much of the stroganoff leftovers. We ate so much of it, but that's fine. i do have a bunch of the kung pao.
oh just a note.. that recipe seems to make a LOT of sauce. I have extra that i can make another stir fry later with.

so what are you eating today??

How many people follow the daily meal plans and is there a nutritional component of doing it (I.e. you get a certain amount of protein, vitamins etc?)
I have been cooking some basic things (couscous and veggies, rice and beans etc) in large batches and having that throughout the week. I don't have much down time during the work week, so last week that worked well for me. I also have chopped up veggies and hummus always available, as well as plenty of fruit. I feel really good for one week in. I know that the meal plan is a guideline, just curious to see how many people follow it to a tee?

I don't - I look at it for ideas and for a rough idea of balancing things, grains, greens, fruit, etc. But, my breakfast is almost always the same thing, even though the kickstart varies some (I hate to think first thing in the morning, I just grab the same thing and that's fine). Lunches are usually leftovers from the previous dinner(s).

I've been following it when I can which has been most days.

I don't know about the nutritional content, but as a "New to Vegan" person, its getting me to try new food ideas that are definatley helping me out.

I'm not a big fan of smoothies... so I skip those. I generally eat cereal and pland milk or toast and jam for breakfast.

Today's lunch is leftover from last night's cook out at my brothers, I brough black and white bean salad. Always a favorite at our house.

Looking forward to Week 2 !!

B- Flax plus cereal & SF Soy milk
L- Black and white bean salad
s- berries
d- Barbqued Portabella's and Quinoa

The first kickstart for me (Sept 2010) I followed the meal plans quite closely. The second time, not so closely, but I used a lot of the recipes that I enjoy. This time, I am not following the meal plans, but I am trying new recipes and enjoying the refreshers on nutrition and planning meals.

Today ~
b: hash browns (oil free) with spinach
s: blackberries
l: Bean Pot Medley, side of veggies
s: ??
d: couscous or brown rice with steamed broccoli and cauliflower, terriyaki.

B - Frozen waffles with agave syrup; orange juice; two vegetarian sausage links
Snack - Almonds
Lunch - Sausage and Kale Soup made with vegetarian smoked sausage (adapted from a recipe that called for turkey kielbasa); banana; clementine
Dinner - Haven't decided yet, but leaning toward baked sweet potato and a large amount of green leafy veggies

I like to follow the kickstart menu, but haven't shopped yet this week, so will have to have the Portobellos later (love them!)

D: Simple bean tacos and mexican corn salad

AM Snack - Gluten free oatmeal w/ maple, banana and flax
L - quinoa/red beans w/ mixed veggies
PM Snack - raspberries???
D - Brown rice/red beans with steamed kale, tomatoes, onions and garlic ....mmmmmm

I love seeing what everyone else is eating--gives me ideas. I follow the guidelines of the plan choosing foods that I'm in the mood for. I eat a lot of beans, rice, hummus, veggies, and soups.

Today Breakfast: tofu scramble with peppers, onions and grated carrot and a slice of toasted sprouted rye bread with a bit of raspberry fruit spread. Decaf green tea and calcium fortified OJ.

The biggest change I have notice since I have begun Kickstart (and I started 5 days before the official date so I'm 13 days in) is that I am actually losing my cravings for fatty, greasy foods. It's getting easier to say "no" to cheese pizza or fried foods. Also, I find I'm less drawn to sweets---I could not believe that I had no desire to eat the cookies my kids and husband made the other day. Weird! But cool!

And I have to mention that my ATTITUDE is playing a big role. I did this kickstart a while back and I went vegan before---but I started to focus on what I couldn't have and felt deprived. I also didn't follow the plan closely enough and give my palate time to adjust from fatty/sweet foods. Now I feel confident about what I'm doing, my stomach doesn't hurt, I'm not bloated all the time and I'm losing weight (3 pounds of my 10 pound goal so far) without going hungry.

Yay!

Hi Jen,
I am right there with you. Isn't it great to look at those ads for fatty greasy food and say.. wow i can't believe i EVER ate that, let alone ate that everyday.

Now we see ads for friendlys and say.. oh yes go out and eat fat and then have some fat and sugar with more sugar for topping. Not something either of us want.

Yesterday mom went to bluegrass meeting. she took her 3-layer delight dessert. Then she came here for dinner. She had some dessert left over. It used to be my husbands favorite. (although i think all desserts are his favorite) she offered to leave it and/or he could have some. he said, "no thanks, i can't." I of course said.. oh yes you can. You CAN have anything you want. I repeated it several times. But in the end.. he still refused. I guess he would RATHER not. It's not about the food you can't have, its about the food you can have, being good to yourself and how you feel when you make the right selections.

My mom is still surprised by my husband. She never thinks he is really a happy vegan. The more she sees that he is, the more she considers it. I think sometimes she "tests".

Anyway.. i think this is the best diet ever. i mean we eat when we are hungry!! who knew!!! someone was holding out on me.. Laughing glad i found this kickstart.

Clipping coupons certainly has gotten easier ... there are usually only about three in the Sunday supplements that are useful for foods on this plan. I have someone at work who, when she found out I use soymilk products, clips coupons for those products for me whenever she finds them ... in return, I keep her supplied with tomatoes from our garden all summer long.

Hi,
I am not really following the menu but I have based my recipes on the guidelines given by PCRM- Fruits, vegetables, beans and whole grains. So far it has been an amazing journey for me.

Today for
B- Raw Revolution Vegan Bar (Cashew, Agave) and some caramel-vanilla tea with a splash of almond milk.
L- I have an Amy's Black Bean non dairy Burrito
S- A banana
D- green smoothie after workout and will make that lasagna loaded with veggies(we didn't cook it over the weekend)

Lunch - had a veggie wrap with tomato, onion, bell pepper, banana pepper, roasted peppers, cucumber, spinach (they put a big handful on!), and the sweet onion fat free dressing. It was quite yummy, though I still prefer hubby's homemade whole wheat tortillas to anything storebought

I think we'll probably add some of the cooked beans from the fridge to the rice and broccoli for dinner

I stocked up at the grocery store last night;
frozen greens (collards and spinach)
broccoli
red,yellow,orange peppers
mushrooms
lettuce
tomatoes
onions (yellow,white,green)
Cuties
bananas
garlic
cilantro
baby carrots
celery
tomatoes
bok choy
mango
whole wheat pasta
canned tomatoes

Went to Costco on Sunday and got more oranges, apples,canned beans. We got there 5 minutes before closing so didn't get to look at veggies and 'shop'. Sad

Today -
b-oatmeal,pumpkin,applesauce,raisins,cinnamon,vanilla
L-carrots,celery,ff hummus
d-cuban black beans over rice (or quinoa) and greens

Well done CJ! That is one well stocked fridge. And, if you are like me, your fridge is full today and empty by Sunday.

Cynthia, since you frequently post about trying different types of bean or veggie burgers, I'm going to change my plan for tonight and try a veggie burger. I'm off to google recipes! Though, I have a dozen cookbooks with many fabulous recipes that have always been good. I like the burger recipe in the Engine 2 cookbook.

Anyway, tonight will be a veggie burger of some variety, and baked sweet-potato wedges.

PIppin. veggie/bean burgers are a staple in our house . they are one day of cooking and a week of eating well. they are quick.. they can be nuked or fried. I have even done some that could probably go on a grill.

also just have a salad on hand... and you have dinner in 5 min or less. Lets see rachael ray to that!!

i take one day and make a bunch.. right thru cooking them. my best turn out's have been the ones that use egg replacer & whole wheat bread crumbs to hold them together and then bake them in the oven.

if you come across a great recipe make sure to share!

KG’s Favorite Black Bean Patties

½ Onion ½ Green Pepper
1-15oz can Black Beans, drained & Rinsed
1 tsp Red Hot Sauce
1 ½ tsp Egg Replacer stirred into 2 TBS water
½ tsp Cayenne Pepper
1 ¼ cup Panko Bread Crumbs

Place onion & green pepper in food processor.
Pulse 2 or 3x to get tiny chunks.
Put onions & green pepper in big bowl.

Next put in Black beans, hot sauce, prepared egg replacer & cayenne in food processor. Mix till mush.

Put bean mixture into bowl w/ onion & pepper.
Add bread crumbs, mix.

Form into 4 patties. Bake on pizza stone at 425 abt. 20 min.
(Same temp & time as French Fries.)
