needing a treat?

Hi everyone,

I haven't made this cake myself yet but I have tasted it when someone else made it and i begged for the recipe. It is devine. Not quite as rich and mosit as a brownie but in no way a dry chocolate cake either. You can swap the sugar to make it more 'vegan' friendly if you want. Its not low fat but sometimes you just have to indulge.

Egg-free, Dairy-free, Chocolate Cake


Ingredients:
1/2 cup vegetable or light olive oil
1 cup sugar

2 teaspoons vanilla essence
2 cups self-raising flour
1/2 cup cocoa
1 1/2 teaspoons baking soda
1 cup water
2 cups grated zucchini
a dash of white vinegar

In a large bowl mix oil, sugar and vanilla.
Sift dry ingredients into this and mix well.
Fold in the water, vinegar and zucchini.
Pour into a lined tin and bake at 180 degrees celcius for 30 minutes
When cold ice with chocolate icing

Does anyone know the conversion to use if you don't have self-rising flour? I know it needs baking powder and/or baking soda but not which or how much. We never have store bought flour in the house, but we do have baking powder, baking soda, etc.

The proportions vary a little depending on the source but generaly it is 1 1/2 teaspoons of baking powder for every cup of flour (some resources say 2 teaspoons of baking powder).

Adding one teaspoon of cream of tartar and half a teaspoon of bicarbonate of soda to one cup of plain flour gives the same result.

not in a million years would i put olive oil in a cake. just use canola and don't even think about the olive oil. in fact if olive oil is all you have don't bother; wait till you get some vegetable (canola).

just my opinion.. i tried it before and it wasn't pretty, in fact it hit the circular bucket after less than one piece.

I would definitely try subbing 1/2 of the oil with 1/4 cup of applesauce. I've made regular zucchini/choc cake and it is delish! I'm assuming this recipe would be great!

I just made this today and substituted agave syrup for sugar, added 1/2 cup applesauce in place of the oil and used wholemeal flour and 2 tsp of baking powder in place of self raising flour. I added a little less water due to the applesauce and agave liquid and it came out great. I will keep this for those special occasions like birthdays when a chocolate cake is called for.
