needing a treat?

Hi everyone, I haven't made this cake myself yet but I have tasted it when someone else made it and i begged for the recipe. It is devine. Not quite as rich and mosit as a brownie but in no way a dry chocolate cake either. You can swap the sugar to make it more 'vegan' friendly if you want. Its not low fat but sometimes you just have to indulge. Egg-free, Dairy-free, Chocolate Cake Ingredients: 1/2 cup vegetable or light olive oil 1 cup sugar
2 teaspoons vanilla essence 2 cups self-raising flour 1/2 cup cocoa 1 1/2 teaspoons baking soda 1 cup water 2 cups grated zucchini a dash of white vinegar In a large bowl mix oil, sugar and vanilla. Sift dry ingredients into this and mix well. Fold in the water, vinegar and zucchini. Pour into a lined tin and bake at 180 degrees celcius for 30 minutes When cold ice with chocolate icing
