Casein & soy cheeses

I made a discovery this weekend. I've been eating soy cheese, thinking this was a good transition food, and OK for the kickstart. Lately I've been having digestive problems and bloating. I never made the connection until reading Kathy Freston's book Quantum Wellness (a great book by the way!). What I learned is that casein is the main ingredient in many soy cheeses. Casein is a protein found in dairy products.

According to Kathy, casein is "a powerful binder, and not easily destroyed (or digested)". She explains that it acts like a glue and binds to other molecules.

I looked at the label on the soy cheese packages (I bought 3!) and found casein as the second ingredient. Another reminder to ALWAYS read the label, even if it says SOY and assumed dairy free. I ate 2 slices on Saturday, and I'm still feeling the effects! Now that I know, I will not eat another slice of that cheese. Beware of caseins hiding in the least expected places!

Many vegetarian cheeses are not vegan. I also look for the little "v" symbol that it is certified vegan.

Thanks for this tip. I bought my first pkg of sliced cheddar flavor w/ jalapenos by Galaxy Nutritional Foods in the Health Food Section of local grocery store. After reading your post I looked over the ingredient list and found Casien to be third which was called 'milk protein'. I do not recall having any problems but I had my first slice almost 3 weeks ago! Will definately check labels more closely from now on. Will miss this forum when the kickstart ends; I have learned so much from each of you and am grateful Very Happy

Yes, some of the cheeses are not vegan--they're designed to be lactose-free (the milk sugar), not completely free of milk products.

Unfortunately casein is the protein in milk that The China Study comes down on the hardest, and according to Dr. Barnard and others is also responsible for cheese's addictive qualities. When casein is broken down in the body, casomorphins are produced--an opioid similar to morphine, meant to facilitate the bonding of a calf to its mother. Powerful stuff! It's why cheese (where casein is concentrated) is often so difficult to give up!

Here are some brands of vegan cheese:

Follow Your Heart, all flavors
Daiya, all flavors
Teese, all flavors
Galaxy, *some* products. They are clearly marked vegan. Here is a list from their website: http://www.galaxyfoods.com/Products/VeganCheese/
Galaxy also makes a vegan parmesan-like topping that is called Vegan Topping, but for some reason it's not on that page.

But one of my favorite things to learn as a vegan cook has been how to make homemade nut, bean, and tofu cheeses. The Ultimate Uncheese Cookbook is a great place to start.

Also remember that even vegan cheeses should be used sparingly, since they can be high in fat.
