If you have the time, you could make some soft tofu using soy milk and lemon juice.. search on youtube for general tofu making instructions, and when they add their coagulating agent-the thing that will separate the soy curds (tofu) and whey (yellowish water left over), you add lemon juice instead. It's an effort.. and you'll just get a little tofu, but worth it!
