Need Yummy Cake Recipes!!!

My Son's 3rd Birthday is on the 21st and I need to make a cake for him! I'd love to make a really yummy vegan chocolate cake, but I'm a little leery of just looking in some random vegan cookbook, because a) my MIL who will be there for the celebration always seems to make comments on my foods..most of which drive me batty and b) because my DH is convinced that vegans lose their real sense of taste and therefore don't know what really taste good any more (paraphrasing what he said last night when I mentioned I was going to ask all of you for a cake recipe..) Rolling Eyes

Essentially I want a super moist and yummy vegan chocolate cake that a person on a SAD (standard American Diet) would find delicious.. and preferably even find it hard to believe that it was even vegan! Wink Would prefer recipes that have been tested on people on SAD diets because I can't do any testing before hand since I have to limit the sweets except on special occasions in the house due to DH being on a diet..

I LOVE this cake. The original recipe called for regular sugar which isnt vegan. You can use Raw sugar or sucanat, agave or any other sweetener.

Chocolate Avocado Cream Cake

Cooking Time: 35 to 40
Preparation Time: 10 minutes

3 cups organic all-purpose flour
6 tablespoons organic unsweetened cocoa powder
1/2 teaspoon sea salt
2 teaspoons baking powder
2 teaspoons (aluminum free) baking soda
2 cups sugar substitute
1/4 cup vegetable oil (organic olive or coconut oil)
1 medium, ripe, organic avocado, well mashed
2 cups water
2 tablespoons white vinegar
___________

Avocado Frosting

2 Medium to large very ripe avocados, well mashed
Juice of 1 organic lemon
1/2 cup sugar substitue

DIRECTIONS

Preheat oven to 350 degrees F. Grease baking pan. (I use 9 x 12 square pan. You can use two 8 or 9 inch rounds if you want a double layer cake.) Set aside.

Sift together all of the dry ingredients. Set aside.

Mix all of the wet ingredients including the mashed avocado.

Whisk, by hand, the wet and dry ingredients until smooth.

Pour batter into greased cake pan(s) Bake for 30 to 45 minutes, until a toothpick inserted comes out clean.

Mix raw ingredients and spread evenly over cooled cake

thanks for the replies...Very Happy The chocolate avocado cake looks interesting and I put Vegan Cupcakes Take Over the World on hold at the library yesterday waiting for it to come in..need to check out those other links...

Any other suggestions??! Smile I realized I can bring in cupcakes to our church moms celebrate my sons birthday, so that would be two days worth of yummies! bummer.. Wink

This recipe is from Baby Cakes. Haven't tried it yet, but the NYC bakery is a favorite vegan bakery. I just bought the cookbook & plan on trying something out of it this weekend. A lot of the recipes are also gluten-free.

Chocolate Cupcakes
YIELD: 1 dozen

1 cup garbanzo and fava bean flour
1/4 cup potato starch
2 tablespoons arrowroot
1/2 cup cocoa powder
2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon xanthan gum
1 teaspoon salt
1/2 cup coconut oil
2/3 cup agave nectar
6 tablespoons applesauce
2 tablespoons vanilla extract
1/2 cup hot water or hot coffee
Frosting for serving (see recipe below)
Preheat the oven to 325°F. Line one, standard 12-cup muffin tin with paper liners and set aside.

In a medium bowl, whisk together the flour, potato starch, cocoa powder, arrowroot, baking powder, baking soda, xanthan gum, and salt. Add the oil, agave nectar, applesauce, vanilla, and hot water directly to the dry ingredients. Stir until the batter is smooth.

Pour 1/3 cup of the batter into each prepared cup. This portion will almost fill the cup up entirely. Bake the cupcakes on the center rack for 22 minutes, rotating the tray 180 degrees after 15 minutes. The cupcakes will bounce back when pressed and a toothpick inserted in the center will come out clean. Remove from the oven.

Let the cupcakes stand for 20 minutes. Transfer them to a wire rack right side up and cool completely. Using a frosting knife, gently spread 1 tablespoon of Frosting over each cupcake. Place the cupcakes in an airtight container and store in the refrigerator for up to 3 days.

Vanilla Frosting
YIELD: enough for 1 dozen cupcakes

1 1/2 cups soy milk
3/4 cup soy “Better Than Milk” powder
1 tablespoons coconut flour
1/4 cup agave nectar
1 tablespoon vanilla extract
1 1/2 cup coconut oil
2 tablespoon lemon juice
In a blender or food processor, combine the soy milk, “Better Than Milk” powder, coconut flour, agave nectar, and vanilla. Mix the ingredients for 2 minutes. As the machine blends, slowly add the oil and lemon juice, alternating between the two until all parts are incorporated. Pour the mixture into an airtight container. Place the container in the refrigerator for 6 hours, or for up to 1 month, before using.

Absolutely and completely have a cake recipe that meets all of your criteria. The Moosewood Vegan Chocolate Cake. I made it for my husband's b-day. He is not at all sold on my vegan diet, and is a big time SAD supporter. He did not think I could make a cake that he could not tell was vegan. Well, this one did it. I was the only vegan at the party, and no one could even tell the cake was vegan. I didn't tell them until it was completely gone. (Luckily, I had saved myself a piece. I didn't want them to see me eating it, because then they would have figured it out!) It is awesome.

Oh, and I did the parchment paper thing to be able to turn it out and used the chocolate glaze. YUM!

kclayton ... thanks for that link. There are a bunch of delicious-looking recipes there. Not all are vegan, but I can't wait to try the Roasted Red Pepper Coconut Soup ... YUM!
