Yeast Flakes?
Posted Tuesday, March 9, 2010 at 9:48 PM

I understand that the Nutritional Yeast Flakes are good on everything so I bought some. I need some help with where to try them next. Should I mix them in soups to make it creamier? I tried Yeast Flakes in our salad tonight, and my hubby didn't like like the flavor. Any ideas would be appreciated.

Thanks.

I sprinkle it on top of things like we used to use parmesan. We also like it on popcorn.

And yes, you can make sauces with it, or put it into soups, etc. It will go best in savory dishes, obviously--it does have a distinct flavor.

I always put some in our tofu scrambles, at the end with a squeeze of lemon juice.

There are good recipes online and in most of the vegan cookbooks for "cheezy sauces" made with nutritional yeast. These are great on steamed veggies, potatoes and grains.

People who drink beer generally love it. Smile It's a similar flavor to brewer's yeast.

I wish it had a more delicious sounding name though!

The nutritional yeast flakes are specially grown for their B12 content, which is the one nutrient you really need to supplement on a vegan diet.

There's a previous thread about it here: http://21daykickstart.org/forum/messages.cfm?threadid=45C467C9-0429-93E4-3466398BA56B41E4#last

And the Red Star website has a "Science of Yeast" section with explanations of different types of yeast here: http://www.redstaryeast.com/science_of_yeast/types_of_yeast/

Here's what they say:
Quote:

Nutritional Yeast is an excellent source of protein, rich in many of the essential amino acids that complement proteins available from other sources such as corn, wheat, and soy. RED STAR Nutritional Yeast contains an average of 50% protein by weight.

RED STAR Nutritional Yeast is also a rich source of B-complex vitamins that are important for normal and healthy body functions.

I have a recipe I got that uses the yeast in a mock chicken pot pie. You mix in the yeast with the tofu. It is so good.

I have not tried it on popcorn yet.

Good luck with recipes.
