What is your food today? Sunday Jan 2nd

HI all, I saw that people were still posting to the the thursday one on Saturday.. So i think it is popular enough to ask again... Also we got some GREAT responses.. So much fun to see what people are doing.. Some made me want to run to the kitchen and try them out.. Like stuffed cabbage.. Then there was the promise of new recipes!! So what are you eating today?? So far today i had a half of a fried (vegan "butter") peanutbutter and banana sandwich & 2 cups coffee w/soymilk.

So far today I have had oil-free hash browns with mustard greens for breakfast, and a few spoonfulls of left over baked beans as a snack. For lunch I am planning chickpea salad on a toasted wheat bun, and couscous confetti salad (I made it for aNew Year's Eve party and everyone loved it). Not sure about supper yet. I will check back here for inspiration.

Hosting a vegan potluck tonight! Soaked some black beans and slow cooking them all day in veggie broth with sauteed onions, celery and carrots. Made seitan yesterday and going to use it to make some stuffed mushrooms. Have some organic kale that I need to do something with, too! Thinking of making a vegan spanokopita with it! Tofu scramble with roasted potatoes for brunch! ~ christine

Breakfast: whole wheat toast with 1 tbsp natural peanut butter and sliced banana. Cup of tea. Lunch: tofu scramble with 1/2 pita bread. sliced apple. Dinner: ???? maybe some pasta, but haven't decided yet.

So far today I have had gluten free frozen waffles, Earth Balance syrup (less than a tablespoon) black decaf and mango juice. I think lunch will be a huge salad. Lots of veggies and add an apple or dried orange flavored cranberries. Dinner will be beans and greens or my rice pasta and homemade marinara sauce.

Had an Ezekiel muffin with jam for breakfast, an Ezekiel pita with hummus, shredded cabbage (green and purple) and shredded carrots for lunch. Dinner is in the crock pot. It's a new recipe and smelled great going together, so hope it tastes as good!! Pam.. i think i am going to try that crockpot curry tomorrow or at least soon.. did it come out good?? I might wait a couple of days because i ordered some different currys from thespicehouse.com wow... great spices with a huge selection.. so i finished off the day with Vegan Sweet Potato Burritos.. They were delish!! http://www.womensadventuremagazine.com/blog/sweet-potato-burritos/ the only addition i made was to smather avacado sauce on the whole wheat burrito before putting in the rest of the ingredients. This recipe is a keeper!

Reporting on the Vegetable curry: It was good but not wonderful. It had nice heat, but not a whole lot of curry flavor. I added another 1 tsp of curry powder and about another 1/8 or a bit less of cinnamon to the big pot after I finished. The sauce was a great texture and veggies were well-done but not mush. Think it will be a keeper once I tinker with the spice amounts. Not sure how old my curry powder is, so that may have had a bearing on it. If you've ordered new, you might want to stick to the recipe first then add if you need to. The recipe also calls for adding the can of tomatoes last minute, I couldnt understand why, so added them along with the other ingredients at the beginning of the cooking time and thought it was fine. Breakfast: A hoagie - whole wheat bread, olives, banana peppers, olives, cucumbers and oil and vinegar. A few baked chips and some chai tea made with soy milk. Lunch: A smoothy with blue berries, strawberries, peaches, soy, and banana. Also some whole grain crackers with peanut butter. I usually put the peanut butter in the smoothy, but my 2 year old wanted it on crackers, so we shared it that way. Dinner: I meant to make hopping john salad, but just sort of got distracted. I ended up making brown rice, kwick kale, and topping all with a mix of navy and black beans seasoned with "Not-Chick'n Bouillon Cubes" and creole seasoning. It was ok. Kind of bland. The beans were great, but maybe I needed to flavor the rice? I think it could be tweaked a little and be really good.

I made vegan pancakes (from scratch!) for brunch, and made a casserole for dinner. Here is my recipe-ish-like thingy: I used... haffan organic onion a poblano pepper 1 pkg Yves Ground Round 1 can organic refried beans 1 c wild-brown rice mix (uncooked, becomes 2 c when cooked) a bit of frozen corn Sazón spice mix, but you could throw in some cumin, chili powder, garlic powder, salt 6 tortillas (flour or whole-wheat) a bit of nutritional yeast some Trader Joe's chili pepper sauce ...and the piece de resistance... FRITOS! 1 cooked the rice and then made three groupings: rice + corn + spice, ground + onion + poblano, and beans + pepper sauce + a bit of water to thin. I layered these (2 layers each group) over the tortillas, finishing off with the ground-onion-poblano mix. Covered the dish with foil and popped it into a 350 degree onion for 40 minutes, then crumbled the Fritos on top and finished it for 5 more minutes. I cannot TELL you how delicious it was! The omni boyfriend went back for seconds... then thirds. We had it with a bit of a lettuce salad. So amazing and what a way to kick off the kickstart!

Morning: Shake made with frozen banana, low fat soy milk, carob, date, and ice Mid-Morning: bowl of cooked bulgur with a dash of maple syrup Afternoon: lentil and carrot stew I made last night over pearl barley Mid-afternoon: whole grain bread with honey (I know, not technically vegan, but I like it) and drizzle of sesame seed paste or some whole grain pretezls and fruit Evening: salad with lemon juice and balsamic vinegar (no oil) and chickpeas, mashed potatoes (mashed with a little soy milk and mustard); some dried fruit if I feel like something sweet Djuna

For breakfast eating musli made yesterday evening and left in the fridge overnight. It is made with raw oat flakes (original type) with dried cranberries and walnuts, the whole thing mixed with soy milk and left overnight in the fridge. No cooking. Absolutely delicious, especially with fresh strawberries or raspberries on top!

Hi guys.. I see a few smoothies in the mix here. Most seem to be just fruit. Has anyone tried to make a green smoothie? I see some of you eat Kale. Kale seems to be a favorite ingredient of the green smoothies. I have been considering trying them. For one they look easy.. just stick it in a blender. Two they look healthy. We might get more nutrients if we don't cook veggies. Just don't know if they are any good. I also am not sure if a regular blender will do the trick. My basic *recipe* for a green smoothie is an orange, peeled and broken into a few sections, a cup of frozen blueberries and a couple of handfuls of fresh spinach. I usually add a half cup or so of water, it depends on how juicy the orange is. You can also toss in flax seed or chia seed. I don't like bananas in mine, makes it too sweet (which is something since I have been a sugar hound!). If you start with a dark berry like a blueberry or a 3 berry mix (costco) it disguises the green of the spinach! Think I will go make one for breakfast! Pam

For brekky this morning: 3/4 cup o.j. (high pulp); coffee with soy creamer; waffles with raspberry syrup; and vegan breakfast patty. I made one of my favorite lunches: a brown rice and kidney bean salad with fat free Italian dressing. I follow the basic recipe from Healthy Cooking magazine, but use whatever veggies I have around. If I don't have the celery, I use sweet red pepper etc. I also cut way down on the red onion and eliminate the garlic, especially for my hubby. He is a rad tech in an outpatient center and doesn't want to be breathing garlic and onion all over his patients! I will also have some fruit with that. My husband took some bread as well. We both have a baggie with raw carrots and celery. Dinner will be the hoppin' john, but I'm using the recipe from a recent issue of Parade Magazine instead of the one provided for the 21 Day. I had cut it out and posted it on my fridge before I decided to use the kickstart, so now I'm committed!

I had cereal for breakfast with unsweetened almond milk, about half a dozen crumbled pecans, and a scattering of vegan chocolate chips (yeah, sounds weird I know but I like a bit of sweet at breakfast and raisins just weren't attractive this morning for whatever reason). Lunch will be leftovers - kind of stir fry of bok choy, lentils, garbanzos, and brown rice with soy sauce and mirin. Dinner tonight is probably going to be rainbow chard and a red lentil and garbanzo 'pilaf'. Ingredients may vary as we investigate what's in the fridge to use up. Later this week, we'll be having a broccoli quiche!! We use Spectrum non-hydrogenated vegan shortening and whole wheat flour for the pie crust. Then we use the basics of the Veganomicon recipe for quiche that uses navy beans instead of eggs. We did a spinach quiche for Christmas breakfast and it was yummy! --Deb R

For our food today, we are having exactly as laid out for Day 1 on the Kickstart, though I am adding extra food for my children to increase their food intake. So, this morning we had Apple Cinnamon Oatmeal and now I am getting ready to make the Couscous confetti Salad and Carrot/Red Pepper Soup. Nummy. Can't wait to try these. As for the Green Smoothies, we have these all the time. We love them. Our green of choice is Spinach as it is a mild green packed with nutrients. When we first started, I only added a little green but now, they are mainly green with only 2 bananas and 2 oranges added in. To keep them moving smoothly through the blender, we also add quite a bit of water. Start with 1 cup and add as needed. We use a VitaMix but I used my regular blender to make them for years before I had the VitaMix. Hope this helps
