chickpea flour

I bought chickpea flour for a recipe and now I have lots of chickpea flour left over. Any great recipes that use chickpea flour ? thanks

Hmmm, there was a recipe in Vegan with a Vengeance that used chickpea flour to make French Toast! It was delicious. I think it was chickpea flour whipped with soy milk, then dip in the sliced bread, cook.

Falafel!! Chickpea flour is also called "besan". You might try an internet search for recipes using besan.

happy herbivore has a Great french toast recipe using chickpea flour. My kids love it. You just have to stir it between batches as it settles a little bit. But it's great with all fruit spread watered down a little and fresh strawberries. Molly: Also, thanks for the tip of besan. I had seen that and didn't know what it was. Now I do!!! Great!!

thank you.. I just went to the happy herbivore website for the first time (where have I been !!)... So many recipes to try.. I will start with the french toast this weekend...

I use it in some recipes from Isa/post punk kitchen (theppk.com). I have used some in seitan and cutlets. I also use it to make chickpea fries, super easy to do and my picky, bean-hating 8-year-old loves them. She and her little sister like to eat them with Happy Herbivore's chickenless nuggets for a fake fast food meal. The chickpea fry recipe is here http://veganfeastkitchen.blogspot.com/2010/03/panelle-southern-italian-chickpea-fries.html I omit oil, except for spraying a little on the pan. I cut the salt to 1/2 t. I tried flavorings once, but did not like it as well as the plain version. You may want to try making a fraction of the recipe first to see if you like it. I have also used chickpea flour to make crepes. Equal parts of flour and water with a little salt. I would just eat them plain as a snack.
