Day 4 meals

Today so far I had a small half of butternut squash stuffed with a mixture of apples, currants, celery, mushrooms and seasoned with curry, 5 spice powder and turmeric and cinnamon. Just threw that together last night, no recipe. Green beans and left over kale. Not sure about lunch, but dinner will be the lentil/sweet potato/quinoa stew that's posted under recipes. I hope I like it!!!

Last night I had an amazing cabbage, tofu, kale combo over rice. It was really delicious! I used Indian spices and red pepper flakes for some zing. I'm on a big cabbage kick these days. Green cabbage and Chinese cabbage have very high calcium absorbability!

Breakfast: Museli w/ almond milk and strawberries Am/Lunch: Quinoa, black beans and veggies YUMMY!! With a side of salade greens and tomatoes mmmmm PM snack - Hummus and carrots Dinner: Roasted potatoes, brussel sprout and onion with tofu.

B: usual cereal and almond milk L: veg chili leftovers, tossed salad with balsamic vinegar, juicy nectarine D: either pasta (whole wheat) and tomato sauce and summer squash or whole wheat tortilla bean burritos with homemade salsa (maybe a wee bit of avocado for a creaminess so I don't reach for the dairy) Snacks: apple, hot cocoa - okay, the cocoa isn't vegan but it was pouring rain this morning and I was SO chilled that a cup of orange spice tea just didn't cut it (at least it's organic, fair trade dark chocolate cocoa) --Deb R

B - shredded wheat with blueberries and almond milk L - low sodium broccoli soup (Imagine brand) with added steamed broccoli and some frozen corn D - not sure, but thinking I will do an Amy's burrito with fresh salsa, lettuce and onions and a salad with only balsamic (no oil). Or I will do beans, rice and veg.

BTW speaking of cocoa - does anyone know of a good instant non-soy based hot cocoa mix? I can make "real" hot cocoa (almond milk, cocoa powder, vanilla, agave, cinnamon) at home but here at work, hot water is what I've got readily accessible (water cooler - cold and hot water spouts - and electric kettle both). I know there are some powdered soy milk products available but soy and I don't get along well. I'm willing to buy ingredients and make my own "instant mix" (used to do that using sugar, cocoa, and non-fat dry milk) but I can't find anything but powdered soy milk. There are some times when it's so bone chilling cold that herbal tea just doesn't cut it. Suggestions? --Deb R

I would like to know, too. i have a severe soy allergy and cant have anything soy (flour, lecithin, oil). i make my own, but a vegan soy-free hot chocolate mix would be great!

Today's menu so far: Oatmeal with raisins for breakfast. The only time I add refined sugar (other than baking) to anything is when I eat oatmeal. Today, I used maple syrup instead, which will be my go-to from now on. Lunch: When I get lazy, I tend to make sandwiches for every meal. I'm only eating bread once a day now and decided to have a vegan burger and air fries from our local healthy burger place. Dinner: Last night, I made kidney beans with home-made ranchero sauce to add some protein to my green beans and rice dinner. There's some left over, so I may have that with a big salad and a side of fruit. Snack: watermelon and a granola bar.

I've seen powdered rice milk in our natural foods store before. You could just substitute that instead of powdered milk/soy milk in a homemade hot chocolate mix recipe. I don't know the brand name...

I searched for "dry rice milk powder" and looked at the alternatives listed there and I'm pretty sure that's the one I saw because I remember it had a green label. B: What a disappointment. Based on a recommendation on the McDougall website, I tried a baked sweet potato to with cinnamon and mixed fruit. Oh. My. Goodness. Blech. So... I ended up tossing that and had a leftover vegan sausage on a whole wheat bun with honey mustard. Yum... But not the best option. Alas. Best laid plans and all that, right? L: Leftover brown rice with beans and kale, liberally dosed with hot sauce. S: paper bag popcorn with a spritz of Braggs and nutritional yeast. D: Going out to dinner at the local pub with a friend. Will have a veggie burger with steamed broccoli on the side. And beer(s). Not the healtiest eating today, but that's life, right?
