Soy Allergy

I have soy allergy, what can I substitute in place of soy/tofu in recipes?

No problem. Soy is not mandatory.

Load up on other legumes if you have a soy intolerance:

Beans: black, kidney, lime, pinto, white, mung, adzuki, garbanzo
Lentils: red, green, black, yellow, brown, French
Peas: snow peas, snap peas, garden peas
Rice milk or almond milk, fortified with vitamin B12, calcium, and vitamin D, instead of soymilk

Exactly - soy is not required. I don't tolerate soy well - not clinically an allergy but it messes with my already-weird hormonal situation. We just don't go for tofu, commercial veggies patties, etc. We make our own black bean patties (Veganomicon recipe); we use cashew based cheese sauce; and hubby is fairly creative in coming up with other yummy options. Yes, this means we don't follow the kickstart menu precisely, but that's okay. The kickstart is a way to get an introduction to a lot of new foods and recipes but is meant to be adjusted as needed (that's what the DIY meals are for - practice at inventing your own meals once the kickstart ends)
