Need Oil Help

Hi All: I had a question come up the other day about oils. I checked out Skinny Bitches receipes (I can't remember the exact name but, as a cliff not, I really dislike that they refer to themselves that way) and there was a section discussing coconut oil and how different oils change molecular structure at certain heats and some of them are actually toxic. They say they use coconut oil for all of their cooking that is heated. Now I was aware that oils react differenly at various temperatures; such as not frying with olive oil, etc. but I never knew that any could be toxic????? Can anyone enlighten me on this one? Also, in my Nutrition 101 class I think I remember coconut actually being one of the only saturated oils that were fruit based? How healthy is it to use coconut oil for everything. I was intrigued because there acutally is a blurb about it in the book Vegan Planet but nothing really in depth about the fat content.
