Cupcakes?

Does anyone know of any Kickstart-friendly cupcake/frosting recipes? I'd like to make some, but I don't think I've ever made cupcakes not-from-a-box before, so I'm a little hesitant about how to go at it. I thought someone here might know of a good one that wouldn't derail my Kickstart efforts.

I made the cupcakes with canola oil. They are very good, but again junk food. The same author has vegan cookies take over the cookie jar. You can probably get them from your library. Golden Vanilla Cupcakes 1 cup Soymilk 1 tsp Apple Cider Vinegar 1 ¼ cup Flour 2 TBS Cornstarch ¾ tsp Baking Powder ½ tsp Baking Soda ¼ tsp Salt (increase to ½ if using oil) ½ cup vegan Marg softened, or 1/3 cup Canola Oil ¾ cup Sugar 2 tsp Vanilla ¼ tsp Almond or more Vanilla Preheat oven to 350. Whisk soy milk w/vinegar and set aside to curdle. If using margarine: Sift flour, cornstarch, baking powder, baking soda, & salt into a large bowl & mix. In a separate bowl use a mixer at med speed to cream margarine & sugar for about 2 min until light & fluffy, don’t beat past 2 min. Beat in vanilla & other extract. Then alternate beating soy milk mixture and dry ingredients, stopping to scrape the bowl a few times. If using oil: Beat together the soy milk mixture, oil, sugar, vanilla, and other extract in a large bowl. Sift in the flour, cornstarch, baking powder, baking soda, and salt. Mix until no large lumps remain. Fill cupcake liners 2/3 of the way. Bake 20-22 min until toothpick comes out clean. Let cool completely & then frost. Makes 12.

Line muffin tins. Whisk together yogurt, soy milk, applesauce, oil, sugar and vanilla. Sift in flour, cornstarch, baking powder, baking soda, and salt, mix. Fill cupcake liners 2/3 of the way. Bake 22-24 minutes. Let cool & then frost. Makes 12.

Vegan Chocolate Fudge Frosting 3 ounces unsweetened chocolate 3 tsp vegan margarine 1/4 cup hot unsweetened soy milk 2 cups powdered sugar 1 tsp vanilla extract In a microwave on low power (3), melt the chocolate & vegan margarine together. Add the vanilla & stir. Transfer to a mixing bowl. Add the hot soy milk. Slowly stir in the sugar until the frosting is creamy. oh..kickstart friendly.. well this is a little closer.. still has lots of sugar.. i would wait till after the kickstart unless there is a special occasion coming up.. and it's not cupcakes, its a cake.. really good..then just put the choc frosting on it. Vegan Low-Fat Chocolate Applesauce Cake 2 cups Flour 1 cup Organic Sugar 1 Tbsp Cornstarch 3 tsp Baking Soda 1/4 tsp Salt 1/3 cup Dark Special Cocoa 2 cups Applesauce 1 tsp Vanilla Pre-heat oven to 325 degrees. Grease and flour a 8x11 cake pan. Note: Because this cake is a bit heavy, layered cake pans are not recommended. Mix all of the dry ingredients together in a large bowl. Add applesauce and mix well until batter is smooth. Bake for 30-40 minutes, until done. You can always tell that a cake is finished baking by sticking a toothpick in the center of the cake. So these muffins are better than any cupcake. They make my socks roll up and down.. additionally they don't need frosting and they look like cupcakes. Carrot Pineapple Muffins Preheat oven to 375 degrees Combine in large bowl: 2 cups Wheat Pastry Flour ¼ cup Unrefined Sugar ½ tsp Fresh Nutmeg, grated 1 & ½ tsp Cinnamon Couple pinches of Salt Sift in & Mix Well: 1 & ½ tsp Baking Powder ½ tsp Baking Soda Add & Stir Well: ¾ cup Carrots, finely grated 1 8-oz can Crushed Pineapple, well drained (abt. ½ c.) ¼ cup Raisins In a separate bowl combine: Then add to dry ingredients. ¼ cup Pure Maple Syrup 1 cup & 2 Tbsp Vanilla or Plain Soy Milk 1 tsp Pure Vanilla Extract Stir through & as it starts to come together, add 2 Tbsp Canola oil & stir until mixture is just combined. Spoon into a lined muffin pan & bake 19-23 min until golden brown and a toothpick inserted in the center comes out clean. Variations: Add a little unsweetened coconut and/or 3-4 Tbsp toasted pecans or walnuts. Makes 10-12 muffins. P/muffin: Calories 156, Fiber 2.4 g, Total Fat 3g (Sat. .2g), Carbs 28.9g, Protein 3.4 g

It was sad and very very hard. But if I could make vegan cupcakes with bo oil then I could have one and not feel guilty I wouldn't make them for a snack or anything....just special occasions

Well i have to confess, i make the baked goods all the time. My honey loves chocolate anything. He loves cookies and cakes. he feels he HAS to have a treat after every meal.. lunch & dinner!! it might only be 2 cookies or 1 small piece of cake..but something. He also takes 2 muffins to work everyday as a mid-morning snack. (its better than those supermarket bars he used to buy) I could care less. he is HOT. He is 50+ and looks better & is in better shape than most teenagers. He runs everyother day 6+miles at about 8mph. The days he doesn't run he lifts weights. he is a "little guy" but as he says, "I'm a tank." but since he is just a little guy he is my hummer. He likes to show off his "guns" Anyway my point is he doesn't have a weight or cardio problem so i just keep making stuff to keep him happy. I don't run into a problem because he likes to freeze everything..muffins, cookies, and especially everything chocolate. after he puts it in the freezer, then i kinda forget it's there

Here is a cupcake for one recipe that I used years back. Haven't tried it lately, but as I remember, it was really good and quick. 1 TBSP whole wheat pastry flour (or ww flour) 1 TBSP Agave Nectar 1 TBSP unsweetened cocco powder pinch of baking soda pinch of salt 1 1/2 TBSP unsweetened apple sauce 1/4 tsp vanilla 1 square of good quality chocolate (optional, but strongly recommended) Mix above ingredients (except optional good quality chocolate square) and pour in small glass custard dish or condiment dish or maybe even coffee cup. If using the optional square of good quality chocolate, press it into the center of the mix. Microwave for 1 minute. Let cool and enjoy!

The Babycakes recipe book is all vegan and only uses agave syrup. It's relatively low-fat, although might not be low enough for this eating plan. They use mostly coconut oil as their oil. One option for "frosting" is to make or buy date paste. Simply soak fresh dates in filtered water for 2-4 hours, then blend them with enough of the soaking water to make a frosting consistency. You can dip the cupcakes into coconut, and it tastes a lot like a healthy version of German chocolate cake frosting. Also, you can then use the soaking water to sweeten tea or something else.
