Green leafies

Okay, I need clarification. What are "green leafy veggies"? I know that any lettuce type green is included, plus chard, kale, etc. But what about broccoli? I always thought that broccoli was a green leafy veg too. I am struggling with getting more green leafy veggies into my diet.

I wasn't brought up with "greens" as a part of my diet. Lettuce was iceberg, and veggies came in cans. I have been trying to come up with a way to cook greens that I enjoy, but so far at best greens are just okay. I don't love them. I
But I love broccoli and eat it most days.

I too did not grow up with greens, but I have discovered kale and love it. The way I usually cook it is in a skillet with water, Braggs aminos (or soy sauce), and onion powder. I eat as is, or as a base for tvp taco, chili, curry, etc.

Kale is my absolute favorite, though I eat it raw in salads with spring mix, tomatoes, green onion, and lots of other good stuff. Smile

Thanks for the lists! I have tried and tried kale and just can't enjoy it. But I made swiss chard last night with a touch of braggs, onion powder, garlic and it was ... pretty good. I'll keep working at it.

I do have to make kale chips and see what the fuss is. Razz

I often put kale in soups. I find it easy to eat that way.

Saute some greens, spinach, kale etc with a little garlic, lemon juice or just experiment on different spices. You will love it.

I made the kale chips (got the recipe from VegNews magazine a few months ago, I think the one with Jennifer Goodwin on the cover) and they were fantastic. I ordered the ones from veganessentials made by kaia and they weren't nearly as good as the ones I made. I like mine in bigger peices not tiny ones and the flavor of mine was much better. You should definitely try to make them. If you can't find the recipe online from VegNews, I will find it and post it, just ask!

There are several types of kale, so if you haven't tried all of them, there is hope that you may like one. I know of lacinato (dinosaur), red, and curly kales. The lacinato is my favorite because it is milder and more tender than the others.

I often buy a lot of kale at once, then wash it, blanch it (1 minute), and freeze it. It is so easy to use this way, and easy to always have some on hand.
