meat replacment.

I came across this recipe for vegan sausages and tried them. Easy to make and and they do taste good. As I am trying to significantly decrease my oil/fat intake I substituted the olive oil for some apple sauce and it worked fine but I am posting the recipe in its original form. Obviously they are not for those who have a gluten intolerance since they use wheat gluten flour.

BEST VEGETARIAN SAUSAGE, EVER!

1/2 C cannellini beans, rinsed and drained
1 C cold vegetable stock
1 Tbsp olive oil
2 Tbsp soy sauce
2 garlic cloves, grated
1 1/4 C Vital wheat gluten flour*
1/4 C nutritional yeast*
2 Tbsp fresh sage and rosemary
fresh black pepper
8 sheets of tin foil (aluminium foil)

Prepare a steamer with boiling water. In a large bowl, mash the beans thoroughly. Add the remaining ingredients in the order listed and mix with a fork until it forms a dough. Knead gently.
Divide into eight even parts with a knife and mould into a sausage shape before wrapping in tin foil.
Place wrapped sausages in steamer and steam for 40 minutes. Ensure the pot always has water in it. Remove sausages from the tin foil and fry in a hot pan with oil for a few minutes or bbq until brown (or leave in fridge after cooling and finish cooking later).

This sounds incredible. Thanks. I love good sausage substitutes but many of them are full of fat and processed "stuff."

I'll have to try this one. There's also one in the happy herbivore cookbook that I was thinking about trying. Maybe I'll start with yours.. Cook up some onions and peppers!! YUM!!!

I have made something like this before from post punk kitchen. http://www.theppk.com/2011/05/smoky-maple-sausages/

I omitted the maple syrup and oil. I used a little maple extract instead. This recipe calls for chickpea flour. I have tried some of the variations that are linked in her blog. Italians are our favorites.

I have also made the Happy Herbivore version, although I don't think I followed the recipe exactly ever - I combined it with Isa's.

sorry - it was from a web site called Safe.
It is a New Zealand animal rights website so not everyone may be into it but they do post some good vegan recipes
