Low-Fat Vegan Birthday Celebration Ideas??

My birthday is this Saturday, and I would like to stay mostly on plan! Any great ideas for a vegan dessert that is more than fruit but not high fat? Something that perhaps feels a bit naughty, but really isn't?  Dinner is already planned...but I would like to make a little treat!

Hey! My two contributions are: Black Bean Brownies http://happyherbivore.com/2009/05/vegan-blackbean-brownies/ and Deep Dish Cookie Pie http://chocolatecoveredkatie.com/2011/05/31/deep-dish-cookie-pie/ I think both recipes could be made sugar-free if you wanted to use stevia. Katie (the second recipe) also provides a fat-free version also. I can personally attest that her recipes are freakin' amazing.

I wonder if you like chocolate mousse? Just google it. There are two basic recipes, one with tofu, which I have tried and found to be WONDERFUL!, and another based on avocado. Usually the avocado kind is billed as raw vegan chocolate mousse. The PCRM recipe is here: http://www.pcrm.org/health/diets/recipes/chocolate-raspberry-mousse but it isn't just chocolate.

Dr. Barnard's chocolate pudding which is in the food for life book and on nutrition md web site. Easy and quick. also happy herbivore "cheesecake" is delicious.. on her webside and in the cookbook. Rip Esselstyn's oatmeal raisin cookies. YUM!! They are in hisbook Engine 2 diet and probably on his website. I put half vegan chips and half raisins. Make them small 2 bites.

Vegan Low-Fat Chocolate Applesauce Cake 2 cups Flour 1 cup Organic Sugar 1 Tbsp Cornstarch 3 tsp Baking Soda 1/4 tsp Salt 1/3 cup Dark Special Cocoa 2 cups Applesauce 1 tsp Vanilla Pre-heat oven to 325 degrees. Grease and flour a 8x11 cake pan. Note: Because this cake is a bit heavy, layered cake pans are not recommended. Mix all of the dry ingredients together in a large bowl. Add applesauce and mix well until batter is smooth. Bake for 30-40 minutes, until done. You can always tell that a cake is finished baking by sticking a toothpick in the center of the cake. I think I will make it for Sunday dinner and serve with vegan ice cream without telling the rest of the family. I may not be able to wait that long! Pam

[b][b]Blueberry Dumpster Fire Cobbler Serves 4 2/3 whole wheat pastry flour 1 1/2 teaspoons baking powder 1 tablespoon vanilla extract 2/3 cup milk substitute 3 tablespoons agave nectar or maple syrup 2 cups blueberries Preheat oven to 350 degrees. Combine the flour and baking powder in a small bowl. Combine the vanilla, milk substiture, and nectar or syrup in a bowl. Add the wet ingredients to the dry ingredients and mix until smooth. The batter will be runny. Pour the batter into a nonstick 8-inch-square pan. Sprinklie the blueberries over the batter. Bake for 45 minutes or until browned. Variations: Serve with lemon sorbet. Substitute any fruit of choice for blackberries. From The Engine 2 Diet book.

Wow! All I can say is...THANK YOU...THANK YOU...THANK YOU! I spent the better part of the afternoon looking at the specific links mentioned...as well as the rest of the attached websites. I have been familiar with Happy Herbivore and Susan V's sites, but haven't really taken the time to peruse them closely in a long time. I'm leaning towards either the Cookie Pie (with some no-fat alterations) or the mousse (done with strawberries instead of raspberry). The new blueberry one that I saw tonight looks good, too! Thanks again! I know what I'll be doing tomorrow afternoon!

LOL, yes, Pam, coming back to report the outcome. I decided to go with the Cookie Pie at Chocolate Covered Katie, but I made changes so that there was no added fat (other than what was in the chocolate chips) and decreased and made the sweetener healthier. Basically what I did was use pitted prunes for the oil, 1/2 cups of dates for some of sugar, and just 1/2 cup Sucanat. (So instead of 1 1/2 cups sugar as in the original recipe I used 1/2 cup dates and 1/2 cup Sucanat.) To make the texture of the prunes and dates more closely match what they are trying to mimic (oil and sugar respectively), I whizzed them up with the apple sauce in a mini food processor and added just enough water to make the mixture pourable (not a paste, like it starts out), about 1 1/2 tablespoons. If I had to add more water, I would have removed some of the mixture, but as my can of cannellini beans was a little bit larger than the original recipe, I figured a little extra would be fine. That and using just a 1/2 cup of Sucanat for the sweetener were the changes I made; otherwise, I did the rest of the recipe as on the site. BTW, I don't bake much, but devised the applesauce/prune trick when working on modifying my mother's pumpkin bread recipe to be low-fat vegan last Thanksgiving. It just wouldn't be Thanksgiving without that pumpkin bread. Prunes really hold on to water, so adding a little pureed prune really helps a baked good maintain moistness, like oil does. I also have used date puree alone as a sweetening sweetening agent. If you ever make too much of either the date puree or the prune/applesauce puree, both are wonderful in oatmeal! The Pie smelled just like chocolate chip cookies while it was baking! With my substitutions, it was a little bit darker looking than the one at the original website. But the taste--in a word--phenomenal! It just tastes really chocolatey, with just a hint of oatmeal. Though the beans comprise the bulk of it, their flavor really fades into the background. It was so tasty and was such a treat--and the only fat was what was in the vegan, grain-sweetened chocolate chip cookies. I would definitely make this again for a birthday celebration. I've frozen the rest so that when I want a little treat...I've got a relatively healthy one right there!

LOL I must have been sending you subliminal messages because that is the one I was interested in. Very interesting tip about the prune-date mixture. I have never cooked with sucanat, so will have to look for that at the local co-op. I was just reading a link yesterday on the Happy Healthy Long Life blog by the Healthy Librarian to a study that showed eating prunes daily increased bone density! So...your cookie also helps increase bone density as well! I was going to try the recipe today but couldn't figure out how to decrease all that brown sugar she has in it. Guess I'm lucky the AC crapped out and I didn't want to bake anything and add all that heat to the house! Belated Happy Healthy Birthday....!!! Pam

Thanks for the belated Happy Birthday, Pam! The date puree is something I have used several times now for any recipe that calls for brown sugar...and some "dark" recipes like my mom's pumpkin bread that called for regular white sugar. Dates are so wonderfully, naturally sweet; I adore them! My mom never liked dates...so I never had them until I went vegan and was trying for healthier sweeteners. To make the date puree successful in any muffin or quick bread recipe, just puree with some water (enough to make it pourable) and then measure like you would the sugar in the recipe. I've used it several times, and it really works like a charm. I use the applesauce/prune puree for an oil substitute in any muffin or quick bread as well. Again, you'll want the resulting puree to be pourable so that it won't rob liquid from the rest of the recipe. So basically, one is a sugar swap and the other is an oil swap. Since this recipe used both "swaps," I just pureed them all together. Thanks for the prune info! How cool! Except for the chocolate chips and all the sweetener...this was a pretty healthy dessert. If you try it, let us know what you think! I hope you like it as much as I did! BTW, Sunspire's grain-sweetened chocolate chips are vegan, and Ghiradelli's Semi-Sweet chips are accidentally vegan. I forgot to mention a thank to CCH22 up above; I intend to use that cake recipe the next time someone in the family wants a chocolate cake for their birthday!

I found a new website from this thread... chocolate covered Katie. I even tried the chocolate fudge pie from her website. We had a wedding to go to. We knew there was no vegan option. So we expected the tossed salad w/perhaps no dressing. We knew we wouldn't eat the cake.. So after a talk with the waitress the chef came up with a bowl of steamed veggies. We got pasta w/sauce off the buffet. When we got home we had our tofu chocolate fudge pie for protien!!! haa haaa now our protein is dessert... too funny.. seems like cheating. The next day i cleaned out the left over veggies.. made a no fat soy/ginger sauce & put them over whole wheat pasta. Again tofu pie. Today I am cooking chick peas.. we love no tuna salad.. maybe i will try chick pea burgers... we like having burgers ready to go for a fast & easy meal. PS..when i make that pie again.. i will reduce the amount of chocolate chips to 1/2 a pkg...(so i have more for another one - i keep them in the freezer) and probably leave out the agave.. it was sweet... but hey it's dessert.

cch22...it may have been a mistake for me to find that chocolate covered Katie's blog. OK, I'm old enough to be her grandmother, but her recipes sound great!! Out AC got fixed this morning (took him 17 minutes but then he chatted another 20...no charge for that!)so baking is back in my future. I need to run to the store and get some prunes though. In anticipation of baking that chocolate chip pie, I bought some vegan ice cream. I got rice dream and another one with a coconut milk base. Both were awful leaving an icky aftertaste. yuck. Pam
