We Did It!

My husband and I completed the 21 Days Kickstart Program and we feel good. We learned so much and enjoyed so many new foods, this has been a life changing experience. Thanks to everyone for all the helpful information and great recipes. My husband who was ready for knee replacement and could barely walk, walked the mall with me yesterday, painfree. He realizes now the meat was killing him. His diabetes is better, his allergies are just about gone, and he sleeps great. He realizes this is what he needed to do.

My husband bought meat and cheese at Trader Joe's yesterday! LOL...?

I'm glad I found this program, maybe someday he will too?

We've gotten excited about new recipes again. Hubby made a wonderful spur-of-the-moment dinner last night: chopped up black beans (pre-cooked in the fridge), diced onion, diced bell pepper, chopped baby bella mushrooms, tomato sauce, cumin, and a dash of chipotle sauce. Cooked that all together then served over a fresh loaf of pumpernickel from a real bread bakery. We've got leftovers of the mix and plan to serve it over brown rice for another meal. Took minutes, lots of leftovers, multiple ways to use it.

He's getting excited to think about making the cheesy sauce for nachos at the annual superbowl party - but not telling anyone it's vegan...until they try it Very Happy And, we'll be bringing the mac'n'cheezy as a "side dish" for Thanksgiving at sister in law's house...I can eat on that and salad, and whatever side veggies they might have and be content.

Well, 6 months ago, my cholesterol was 220 and my triglycerides were 250. I went for a check-up 2 days ago, and my cholesterol is now 160 and my triglycerides are 170. This is completely due to the kickstart, because nothing else has changed! I told my doctor what I've been doing and she told me to keep it up because it's working - she even asked for a couple of the recipes.

Also, I went hiking with my daughter's girl scout troop, and had the energy to make it through the whole day with the girls - this never would have happened before.

I could not be more proud of myself! I have been vegetarian for nearly two years now but have been unsuccessful making the transition into veganism on two different occasions. The support that this program offered me, along with the meal ideas and book recommendations was just what I needed. I can now say with pride, 'I am a vegan.' And thanks to John Salley...I also stay away from refined sugar. I've lost 4lbs and feel fantastic!

Bmore Marathon 2010 here I come!

I've always been an Atkins type eater. Love the meats...I've never been a vegetarian so eating Vegan was a huge change and I love it. My daughter and I will continue eating this way and my husband will eat whatever I cook, but he isn't planning on skipping meat when out to eat.

I'm not sure if I lost any weight, if so it was minimal, but I bought a scale so now I can watch and see what happens. I will start monitoring my portions to see if I'm eating to much of something. I've never been a huge fan of beans, so I think my body has taken quite a bit of time trying to get use to them. Lentils are new to me and I'm enjoying finding new foods to eat.

My story is a strange one. I have had the opposite experience from many of you, in that I've used the plant-based diet to gain weight. (Though my cholesterol, triglycerides, etc. have all improved, too.)

I am a recovering anorexic and at this time last year I was at a dangerously low weight of only 88 pounds on my 5'4" frame. Finding PCRM, I began to learn about the health benefits of a plant-based diet, and was attracted to that. I have been an marine life advocate for some time, but had never made the connection between the animals I was trying to save and the animals I was putting in my mouth. Finding veganism finally made that connection for me – my "aha!" moment – and I knew that I had to pursue the lifestyle change. I began to learn about nutrition and health through a plant-based diet, and to learn more about animal activism and how I could help save our planet through my food choices. What I learned is what allowed me to begin to recover from my anorexia.

Once becoming a vegan and choosing low-fat, whole, healthy plant-based foods, I began to feel good about food again. I no longer felt guilty for choosing certain foods, and I didn't have to feel the guilt of eating animal products. Knowing that my food choices are the best for my body, for the animals and for the planet is part of what is helping me recover from my disease.

You'll notice that my signature says that I lost 76 pounds. I use that because I used to be obese, and I am now using the low-fat vegan diet to maintain a healthy weight, not too high or too low. I no longer starve myself, and I no longer shovel junk food into my body with abandon. I will always struggle with eating disorders, but I am confident that through a combination of therapy, group support, proper vegan nutrition and making healthy, whole food choices, I will continue to move in the the right direction for as long as I walk this earth. This vegan lifestyle has allowed me to truly live.

I hope my candor doesn't turn anyone off, and that it isn't so personal that it makes you uncomfortable. I think sometimes hearing these personal stories can be really helpful, especially if someone can see a little of themselves in it. Knowing that I am a compulsive overeater as well as a restrictor, some of you may see something in my story that helps you or could someday help a loved one.

And besides that, I now know the healthy ways to gain and lose weight! Laughing

Thanks for sharing your story Molly. It's always interesting to hear the path of others. I have a good friend who is a compulsive overeater / restrictor. I so wish she could open her mind to a vegan diet, but she just isn't ready. Right now she is about 80 pounds overweight and very depressed about it. The 80 pounds seems so overwhelming she gets depressed and eats, then she hates herself for the overeating and starts all the restrictions.

I will share your story with her, and who knows, maybe there is something here that will speak to her in a way that I can't.
