What R U eating Wed April 13?

Hi All,
so today i am not prepared. I can scrape by today but tomorrow, unless i do something i will be lost.

b-easy, cereal w/almond milk (ran out of soy) & coffee & opps out of banana too.. Sad

l-i have a 1/2 bowl of carrot soup and the basics of a salad..lettuce & tomato.. I think i can find a can of chickpeas in the pantry and maybe stop by the local supermarket for a cukecumber on the way to work. A little boring but it will work.

d-i unthawed some chili that was in the freezer.

right after dinner i am on my way to yoga class. something new for me. I do cardio almost everyday, also bike ride & kayak when i can. I am looking forward to working on my balance. i am a little bit of a klutz. i have a hard time walking & chewing gum. Laughing well maybe not that bad...but i definately am not an athletic person. It takes a few times to learn something. So this should be interesting.

I also would like to call the rollarskating place. They must have adult skate. That would work on balance as well as incorporate a little loud music and dance type moves.

anyway after yoga i will have to make something for tomorrow.. and it will be the time i am usually sitting down for the evening. maybe i will make a quick jeff novick pasta dish.. whole wheat pasta, diced tomatoes with chili peppers, a can of beans, and frozen mixed stir fry veggies. It goes together quick.

B: change of pace - small homemade whole wheat bagel with peach jam (the fruit juice sweetened kind)
L: leftover rice and bean salad with some fresh baby spinach
D: chili! perfect for the raw dark rainy day
S: apple and probably a cup of hot cocoa at some point (okay, it's not vegan but we're low on supplies that I can easily bring to work - Saturday is grocery day)

Going on vacation for two days (thus running the supplies down slightly - I'd hate to return to a kitchen full of spoiled fruit and veg)

B - whole wheat toast with hummus and a slice of tomato. Smoothie with blueberries, banana, oj and chia seeds.

L - leftover bok choy (from the garden..yeay!), carrots, and rice with marinated tofu.
The marinade was made with chili, garcic, equal parts sugar and water (about 4 T), and 5 T of seasoned rice vinegar. I simmered it for about ten minutes, then marinated the tofu for another ten. I was too hungry to wait any longerSmile

S - fruit and a handful of nuts

D - we have a head and a half of cauliflower to finish up, so I'm thinking that I might make a cauliflower soup and some salad.

We use cauliflower to make a vegan shepherd's pie - cook and mash the cauliflower for the "potato" layer; we use black bean crumbles (cook the beans, let them cool, hit'em with a potato masher once or twice to rough crumbles) mixed with a can of diced tomatoes and diced onion for the "meat" layer, and we use any veggie we may like (corn, peas, mixed veg, etc) for the "corn" layer. If we're looking for a little bit of fat mixed in, we'll drizzle some of the not-cheese sauce over it but typically we don't bother.

I'm still sicker than a dog today with a sinus infection but I'm hanging in there. I did up a menu for the whole next week so I don't have to poke around looking for what sounds good when I feel like this. My goal for today is to REALLY cut down on my sodium, increase my potassium intake and treat fat like it's cyanide. I made the mistake of buying vegenaise, which while it is vegan, is not at all fat free. Keeping a food diary on http://caloriecount.about.com really gave me a heads up on how much fat I didn't realize I was taking in.

B - HOT coffee with almond milk (I usually don't drink coffee during the week but today I just needed the comfort), Black sour rye toast, dry.

L - Leftover rice pasta with sauteed veggies, mashed winter squash

D - Lentil & Quinoa Tabouli soup, whole grain bread for dipping in the soup and sauteed garlicky greens on the side.

B - Van's waffles with agave maple-flavored syrup; orange juice; veg sausage links; coffee
Snack - baby carrots and hummus
Lunch - leftover "sausage" and kale soup, whole grain roll, banana, clementine
Dinner - Quinoa pilaf and large amount of green vegs

Oh... I like the vegan shephard's pie with cauliflower idea! Every once in a while, I get a craving for it, but I've stopped eating all the fake meat crumbles, and I didn't really know what to sub for that. The beans would be great. Thanks!

oh that vegan pie does sound good.. and something different! i will have to give it a go sometimes. This is one thing i like about this thread. it gives me new ideas! like everyone brings a pot luck.. too bad we were not closer and could do that huh? this is the next best thing for me.

Yesterday, we ended up eating some take-out thai food. Veggies and Tofu stir fried with brown rice(No fish sauce, oyster sauce or egg!- I have the habit to tell this no matter what asian restaurants we go to!)

Also, my door knob broke Sad so I was locked inside for an hour until the after hour emergency help people for my apartment came! So instead of going to the gym at 7:30 p.m. ended up going at 9 p.m. But overall was a satisfying day (good food + exercise!)

Ok enough of my rambling now back to business

B- Today had some coffee with splash of almond milk and a banana
L- Amys burrito (didnt get time to cook after yesterday's fiasco!)
S- Toasted cinnamon rice cakes
D- Will make some lentils and rice! yumm (comfort food for me!)

Hi all! taking notes this morning about that vegan shepherd's pie!

b: hash browns, spinach (oil free)
s: black berries
l: steamed red potatoes topped with mixed veggies, tamari.
s: McDougall cup of soup
d: "Snap Meal" (AKA Jeff Novik's Fast Food). Frozen veggie mix, can of white beans, canned low sodium tomatoes, Italian seasoning (or maybe curry, or Tex-Mex ... I can't decide right now), served over brown rice. Very Happy

I'm not 100% sure yet, but here's what it's looking like so far:

B - cereal with rice milk, decaf coffee with almond milk, orange juice
L - green salad
S - yogurt and berries
D - portabella mushroom, asparagus, and either quinoa or brown rice
S - smoothie

The OJ is leftover from pre-kickstart grocery shopping. I'm finding I have a few things in the cupboard and fridge that I need to use up, even if they're not vegan. I won't be replacing them, but I'm not going to throw them out or give them away. I'll just try to work them in as I can.

Breakfast: Coffee with almond milk. Kashi cereal, wheatberries, rice milk and a banana.

Lunch: refried bean soup over brown rice & wheatberries, sprouted wheat sourdough bread with hummus. YUM!

Snacks: fruit (maybe watermelon)

Dinner: Looks like it will be veggies of some sort over rice or maybe just a big salad. Still thinking...

Deb, this sounds good! do you bake it in the oven?

yup - just like a 'regular' shepherd's pie - do the layers, bake it until it's hot all the way through. It's a nice, fairly simple comfort food that makes plenty of leftovers (we usually make a lasagna pan size batch to eat on for a couple days)

today I am off to a late start, lol. I am really craving Tempeh Bacon & Kale, but feel to lousy to go out. So I am just myself a grain, bean, & veggie chili from yesterday's leftover food. For dinner I will probably go out back and pick some collards. Simplicity is the game today. lol

B- 1/4 cantaloupe, 1/2 banana, and 1/2 orange

L = steamed veggies (broccoli, cauliflower, carrots, and onions)

D - fake tuna salad ( chickpeas, tofu dressing, apple, celery, onion, pickle, and green olives)
