Birthday Menu help please!

My daughter turns 20 this week and has asked me to make dinner for her (we usually go out to eat for birthdays) I'm looking for something simple but different to make.

I'll probably make the Couscous Confetti Salad since we all loved it, but need help with the rest of the meal. If you have a different but tasty favorite could you suggest something please Smile

What is her favorite type of cuisine? American, comfort food? Spicy Indian food? It would be fun to help you plan a menu!

She is pretty easy to please, does like Asian food quite a bit. She does not like spicy food though, so I usually modify spices in the recipes.

Miso yegetable soup
lettuce tofu wraps (like at PF Changs but health-ified?)
stir fry with bok choy and other amazing veggies?

lemon ginger sorbet

green tea...?

What about a burrito party? You have all the fixins', heat some whole wheat and corn tortillas, and let everybody make their own yummy burrito!

Black beans, salsas, lettuce/spinach, sauteed green peppers and onions, rice, corn, and any other favorites!

Sounds yummy Susan.

I have done something similar with tacos. Set it up like a salad bar and just let everyone build their own tacos. Refried beans, Boca Burger Crumbles, guacamole, vegan cheese and sour cream, onions, jalapenos, salsa, hot sauce, lettuce, tomatoes. Fixed a refried bean side dish and Mexican rice. It was great.

Thanks for the great suggestions. I just went to the market and stocked up on supplies for asian and mexican dinners. Figure I will make them both this week Smile

I also purchased whole wheat lasagne noodles so I can make a vegan eggplant lasagne. Still searching for the recipe I want though, but I have tons of eggplants in the garden, so I need to get busy.

I love making vegan Moussaka with eggplant, using this recipe from Vegetarian Times. I omit the oil and rice (though you could leave the rice in, using brown rice), and I use MorningStar Farms Crumbles, Italian Sausage style. I also like to use wheat germ instead of breadcrumbs because of the health benefits and nutty taste, but that's just me. Wink

Thought I'd mention two cookbooks written just for celebrations and holidays, especially since we're coming into that season! Both are vegetarian, though the second is "flexatarian," so neither are straight-up vegan, but that could be good if your family is mixed between omnis and vegans. Both books are available on Amazon.
