I was trying to figure out a place to post this instead of starting another thread, but couldn't figure out a good place. Anyway ... OMG! Amy's Black Bean & Vegetable Enchiladas! Vegan, organic, and DELICIOUS! Can this really be healthy??? I definitely need to pick up some more of these for days like today when I am running late and don't have time to plan and pack a lunch. I'm eating these with a spinach/alfalfa sprout/mandarin salad and loving every bite!

Very yummy. I definitely recommend it!

I just tried the tamale and black beans. Sooo good! I've been craving tamales like crazy lately, and tamales are normally about as far from vegan as can be. I need to go pick up some more while they are still on sale (New Seasons). The shephard's pie is pretty tasty too.

Amy's does have some wonderful frozen vegan entries available! However, watch the sodium content and make these items "treats" rather than everyday meals if sodium is an issue for you. I agree, these are great for times when the clock does not allow meal prep, or just as a break from cooking, etc. My Costco carries an 8-pk. of her lentil (4) and minestrone (4) soups. I use these as a "base" for some dishes, and add veggies and spices. However, they are good on their own, but if needed, watch the sodium. However, I don't feel too bad since I don't have salt, as such, in the house. Sodium is a real issue for some.

Good reminder on the sodium. Last night I wanted to fix something quick and easy and pulled out an Uncle Ben's rice/bean/veggie mix. I had checked it in the store for any non-veg ingredients and it all looked OK. Last night I looked more closely at the label and was shocked at the amount of sodium! I don't remember the numbers, but it was a lot! It didn't even taste all that great, so I won't be buying these again. I know it would be lots better to cook up a big pot of rice myself and have it ready, but I just haven't gotten that organized yet! I definitely prefer the whole food, freshly prepared meals, but need some decent alternatives for when time is short to get something ready. Amy's is usually good, as long as you watch for whether it is vegetarian or vegan.

Try the instant version of brown rice available in most supermarkets. Just add a well rinsed can of beans & seasonings.

Today for lunch I had the leftover Uncle Ben's rice mix with some homemade black bean & corn salsa on tortillas. Now THAT's delicious!
