RE: Roasted Tofu
We usually press the tofu, then marinate in a little soy sauce and seasoned rice vinegar (or plain rice vinegar). Bake for 20 minutes at 350 F on a lightly oiled sheet pan (flip halfway).
This is kind of generic, so you can top with another sauce after baking if you want
RE: Today's menu
B- Oats with maple and a sprinkling of chopped walnuts, plus a small smoothie (fortified OJ + strawberries + blueberries + banana)
L- Salad with romaine, red leaf lettuce, baby spinach, carrot, celery, cherry tomatoes, navy beans, a few sunflower seeds, seasoned rice vinegar dressing
S- Raisins and 1 cup of Multigrain Cheerios for b12
D- Polenta topped with kidney beans and marinara, small side salad of mixed greens with balsamic vinegar
