Day 5 - whatcha eating?

B - museli with almond milk
am/lunch - left over quinoa, black beans and mixed veggies
pm snack - soup and salad
D - roasted veggies with tofu.....

Anybody ever roast tofu before? Advice?

B- Bowl full of apples and celery
L- Quinoa and 3 bean salad, Green beans sauted with onions, garlic in water + garam masala and 2 chapatis (Indian flat bread)
S- Banana
D- I'll make some vegan enchalidas with corn tortillas, veg refried beans, onions (no tomatoes for me because of kidney stone issues) + green smoothie (blended collard green leaves, cranberries, blackberries)

B: cereal with almond milk
L: leftover veg chili with tossed salad (leaf lettuce, tomato, balsamic)
D: not sure - maybe whole wheat pasta with summer squash, diced tomato and herbs
S: cup of cocoa so far; not sure what the rest of the day will bring

Hmm just thinking that dinner might also be quinoa, chickpeas or black beans, mango and braised kale - the kale and mango need to get used

RE: Roasted Tofu

We usually press the tofu, then marinate in a little soy sauce and seasoned rice vinegar (or plain rice vinegar). Bake for 20 minutes at 350 F on a lightly oiled sheet pan (flip halfway).

This is kind of generic, so you can top with another sauce after baking if you want Smile

RE: Today's menu

B- Oats with maple and a sprinkling of chopped walnuts, plus a small smoothie (fortified OJ + strawberries + blueberries + banana)

L- Salad with romaine, red leaf lettuce, baby spinach, carrot, celery, cherry tomatoes, navy beans, a few sunflower seeds, seasoned rice vinegar dressing

S- Raisins and 1 cup of Multigrain Cheerios for b12

D- Polenta topped with kidney beans and marinara, small side salad of mixed greens with balsamic vinegar

L - curried lentil soup (yuck!! didn't do it for me!!)
D - smoothie

b: Baked potato topped with spinach and nutritional yeast

s: a few pretzels

l: baked potato (I was uninspired!) topped with mixed veggies (frozen), spritz of soy sauce.

s: an apple or banana or some other fruit.

d: wheat tortillas topped with ff refried beans and an assortment of fresh veggies (clean out the fridge night), salsa.
