hungry and GAINING weight

I do not wish to be gaining weight. I seem to always be hungry. I have increased the amount of beans I am eating because I thought the fiber would make me feel full. Not helping - I am still munching or wanting to be munching almost constantly and gaining weight. Any ideas as to what I am doing wrong? I have been having oatmeal, raisins, a piece of fresh fruit, 1/2 teaspoon of cinnamon on the oatmeal/raisin cereal; followed with a cup of coffee for breakfast. Lunch is beans (one cup or more) with a grain (1/2 to 1 cup) or lentil soup (3ish cups) with vegetables. Dinner is pretty much the same as lunch in regards to content and quantity with the addition of a salad, vinegar and lemon dressing. I also have a piece of fruit or popcorn in the afternoon as a snack.

You might try replacing some of the grains and even some of the beans with cooked or raw vegetables, particularly leafy greens and other green veggies like broccoli and zucchini, etc. They also have a ton of fiber to fill you up, but are lower in calories than grains and beans, with lots of nutrition too. If I overeat grains or starchy vegetables like potatoes--more than one or two 1/2 cup servings a day--I can gain weight. This plan recommends 5 servings a day--but that's just proved too much for me. I am avoiding wheat, but still do things like quinoa and rice. I'm also not eating pasta/noodles or bread right now...because I simply love those things too much to not overeat them. I don't plan to ban them forever, but so far it hasn't really been a problem, because I like the results. Fresh fruit instead of dried fruit like raisins will also help, for the same reason--more water content and larger volumewise, so you feel fuller for fewer calories. That's what works for me anyway. My days lately have looked like this: • Breakfast is ether a large fruit salad, or a large smoothie with fruit and greens, or 1/2 cup oats cooked with soymilk with fresh or frozen fruit and a few nuts. (This plan restricts nuts/seeds, but I allow up to 1-2 oz a day for myself, including daily flax or walnuts for omega 3s.) • Lunch is almost always a homemade soup (I am watching sodium also) with beans, and a large salad with various leafy greens and other raw vegetables, with a ff dressing like flavored vinegar, salsa or lemon juice. If I am still hungry after that, another piece of fruit. • Snack, if I have one (and I try not to unless I have worked out, which just makes me hungrier), is usually hummus with flax crackers, or hummus wrapped it a lettuce leaf, or maybe another piece of fruit or serving of frozen berries. • Dinner might be a veggie stew with a grain or starchy vegetable (if I haven't already had my allotment for the day), with another salad or steamed greens. Or a bean burrito stuffed with lettuce and any other veggies I can find on a brown rice tortilla. Or those Tempeh Tostadas from Dr. Barnard's book on baked corn tortillas. YUM. • Herbal tea after dinner Pretty simple. 10 lbs down since Jan 1, most of that since I started doing the above variation. The main thing is I am full, have enough energy to exercise 4 days a week, and not bored with my food. So it seems easy. Hope you find something that works for you! Good luck!

Essie knows her stuff! Stick with raw non-starchy veggies and leafy greens (zucchini, celery, lettuce, kale, collards, chard, spinach), and you'll be able to fill up without filling out.

I didn't have that problem at all (!), so I'll relay some of the staples in my life. First off, I'm a bad breakfast example because V-8 and coffee with Silk plain is it. I do have Shredded Wheat and Fiber One in the pantry, along with oatmeal, but rarely use unless it's on a day off. I work at 11 a.m. so I take one or a couple of the following for lunch depending on my shift length: banana, pear, cup+ of blueberries, walnuts/almonds (raw), mango or papaya already skinned/sliced with a little lemon juice sprinkled on it, dried apricots, or edamame. Sometimes it's as simple as some tomatoes cut up with Newman's Own Light Italian dressimg sprinkled with oregano, or Sesame Ginger dressing (yes, they're vegan). Sometimes I take my wonderful bread (Safeway O Organics brand, Whole Grains, Seeds, and Fiber) prespread with garlic hummus and sprinkled with oregano. Then load with spinach, tomatoes, green peppers, cukes, black pepper, and sometimes pickles. (We own a Subway restaurant.) Sometimes just take the bread and slices of vegan cheese, put in the toaster oven then add the veggies. (http://www.followyourheart.com. Click on "Vegan Gourmet" and see each cheese's nutritional info.) Sometimes I take dinner leftovers, which is usually a veggie mix. I always have broccoli, asparagus, red bells, cauliflower, zukes, yellow crook neck squash, celery, carrots, along with spinach, red cabbage, and onion available. Avocados when available, along with portobello mushies. I have organic whole wheat pasta, along with a four grain rice blend, split peas, couscous, and potatoes of some variety and add them instead of, or with beans. Keep cans of pinto, kidney, and blacks available (no salt added and rinse off the liquid). Fresh ginger and garlic are a must for me, along with cumin, curry, chili powders, Mrs. Dash's table and spicy mixtures, oregano, and dill. GOT to have nutritional yeast for B12 and a wonderful nutty, cheesy flavor - YUM!! I also keep Amy's lentil and minestrone soups to use as a base for meals (add veggies and spices). Have Morning Star's Chik'n Strips and Meal Starter Griller Recipe Crumbles in the freezer. CAREFUL on this - they offer two versions of Crumbles almost identical, but only one is vegan! Have more odds and ends, but with these basics, plus firm tofu and tamari soy sauce, I make some wonderful dishes! Only been vegan 9 mos. on the 15th, so I've got a lot more experimenting/learning ahead of me! True, I only cook for one and don't require a lot of variety, but I've lost 40 lbs. (30 in under 4 mos.) and have just recently started to exercise!

I guess I'm a little confused. I thought the whole idea behind this plan was eating whole foods, as much as you liked, and not having to count calories or worry about the amount you where eating? Otherwise isn't this just like any other diet..........calorie restriction? Isn't eating starchy foods what this is all about? Reading what your eating doesn't seem to be a lot of food. Maybe I'm confused and don't really understand the whole thing. (wouldn't be the first time ). Congratulations on the weight loss! B

I'm eating a lot of food--my salads are enormous and I'm eating half the fruit bowl in the kitchen each day--and not counting any calories. I think the commonality here is more vegetables, raw and cooked. If veggies are the thing you eat most of, you're getting the nutrients you need and the fiber you need, which both help your body feel full and satisfied. Whole grains and starchy veggies are good, as long as I don't eat so many of those that I don't get my veggies in. I've learned I treat those thing as comfort foods--may not be true for everybody. I was eating, for instance, polenta for breakfast, sandwiches or wraps for lunch, and baked sweet potatoes with veggie toppings for dinner, with some raw veggie salad and fruit, but on the sides of my meals. All I did was flip the proportions. I'm trying to look at each meal as an opportunity to give my body the best nutrition I can, focusing on how great this is making me feel, and how cool it is to feel in control like that. It's been kind of fun.

Does anyone use soy cheese? I make a bean dip that is out of this world! I use soy veggie crumbles, (one bagfull), 2 cans of Amy's non-fat refried beans, black beans, 1 jar chili sauce, 1 small onion diced up, and I mix it all together...then heat it up. This makes quite a big bowl full. It is a wonderful veggie dip or tortilla dip. Or I like to just spoon some on a whole wheat tortilla and have it for dinner or lunch!! I have lost almost 8 pounds in three weeks and I have not counted any calories, just portions!! No nibbling on cookies, candy, and crapola anymore...nor crackers or chips.Veggies and hummus are good or just plain green pepper....yum!! Popcorn is good too on week-ends when watching a good movie or two.

Your concentration on food and the "terror" about gaining weight can also be holding you back. You are materializing exactly what you are thinking about. You are calling it into your life. Try instead to think about "what nutrients does my body need most at this meal" and "I am my perfect, healthy weight right now." Not I WILL BE or I WANT TO BE, but I AM. It takes the pressure off. It lets your body adjust and heal. And it allows you to enjoy the journey to good health. You have made one of the most important commitments of your life. Do not sabotage yourself!

You are VERY welcome. But I did forget 2 important things: When I think I am really hungry, sometimes drinking a lot of water fixes it. On this diet, I am finding I need even more water to keep flushing all the fiber. I am drinking about 10 glasses a day. And if I am still hungry, I eat just a little bit of something, usually a few raw almonds. With the water, I really feel satisfied. Get enough sleep. Studies show we all crave sugar and fat to keep going if we are sleep deprived. The body has enough to adjust to right now. Add an extra hour if you have to.

Thank you for the two very important reminders. I did know I should be drinking water but I haven't been drinking even the 8 glasses. I also have read the importance of sleep on cravings and overeating. Thank you again.
