HAS ANYONE MADE HOMEMADE SEITAN?

I've made a few different recipes for seitan. Not the rinsing with flour, but just with vital wheat gluten. I'm trying to get a texture more like the store bought, but every kind I try always ends up a little spongy. I still eat it as I'm not very picky, but I would like to get it more like the store texture. Recipes I have tried "totally vegetarian", happy herbivore, and I believe "vegan on the cheap" Thanks.

I've only made it once at home and it was a version of pot roast from the Vegan Diner cook book so it was one big lump for slicing. I don't remember it being especially spongy, probably because I was too busy being bitterly disappointed that it didn't resemble pot roast in taste or texture. I'm guessing however that since over-kneading your bread can make that tough then kneading the bejesus out of your seitan dough will accomplish the same thing. The longer the gluten strands the tougher and more elastic they are. If you do try that let me know how it turns out. For myself I have been craving ham salad lately and I found a recipe for a homemade vegan "ham" made from smoked tofu, spices and vital wheat gluten that I want to try.

I am no help to you with your recipe dilema but you both have my mouth watering thinking about it. I used to buy a Tofurky from the store on special occasions (e.g. birthday and christmas)to have a vegetarian feast before my vegan days. I cant buy anything like this where I now live so I am going to have to try making my own. Sounds silly but I hadnt thought of making my own before but I am inspired and will have a look at the recipes and practice between now and Christmas. If you do find a "best ever" recipe can you post it here to share. thanks

Kiwi... seitan is actually really simple to make. It's basically just a dough made from vital wheat gluten, seasonings and water or broth. You can add all manner of spices and seasonings to get a variety of different flavors. I actually have a book on how to make handmade sausages and salamis that I have converted over to use in my vegan recipes. Many of the seasonings that work for making seasoned meat products can be used to achieve the same flavors using tofu, TVP, seitan, lentils or chickpeas. So far my biggest successes has been vegan "tuna" salad using chickpeas and brazil nuts ground in my grandmothers old hand cranked meat grinder and mixed with chopped red onion, celery, sweet relish, salt, pepper, nori or kelp powder(for that taste of the sea) and vegan mayo, a very good "chicken" salad using the same ground chickpeas and brazil nuts, chopped red onions, olives, tomatoes, vegan parmesan, and vegan ranch dressing spices added to my own homemade vegan sour cream and mayo. And finally a pretty mean vegan braunshweiger or liverwurst using ground cooked lentils instead of liver or pork. I call it liverbest which makes my non-vegan mom cackle like a wet chicken every time her hears it. I have high hopes for the vegan ham. I will let you know how it turns out.

SpongeBobFP: I made a vegan pot roast from the happy herbivore cookbook. It came out pretty good. Actually the texture was less spongy than when I boil it. Hmm. Maybe I need to bake it covered in foil.. I did see a recipe from Dr. Barnard on I believe sloppy joes that you make the seitan and bake the slab in the oven and then put it in the food processor to get it looking like ground meat. I may try that this weekend if I'm ambitious and if I can find where I saw that recipe. i'll definitely let you all know if I find a good recipe for it... Trial and error!!! Has anyone tried the buckwheat noodles and seitan in the kickstart. It's YUMMY!!! Made it several times. The only thing is the recipe doesn't say red peppers and in another book of Dr. B's it has red peppers which is a wonderful addition.

I have tried making seitan four or five times. My first attempt was fabulous. Just the right texture and flavor. After that, my attempts weren't as good. Once I think I over kneaded the dough. Another time I boiled it on too hard a boil, resulting in sponginess. My favorite recipe is from Veganomicon, basic seitan. I will keep trying and hope that I will learn the technique that works for me.

Pippin: Could you post that recipe. I don't have that cookbook, or is it on line somewhere. The boiling too hard may be part of my problem. I'll have to try that change too.

Here is a recipe for an amazing beef seitan developed by Bryanna Clark Grogan, a wonderful cookbook author. It's a bit complicated but the results are worth it! http://www.essigfarms.com/recipes/entrees/359-bryannas-new-beefy-seitan It seemed so much like beef to me it was scary!
