I make black eyed peas in the pressure cooker, but I don't use a recipe...I just put lots of chopped celery & onions, bay leafs, and a little chopped carrot for color and bring to pressure then let sit at pressure for 15 minutes. I don't presoak the beans, but I do add some salt & pepper.
The reason I responding isn't to tell you my fuzzy recipe, but to tell you that I purchased a wonderful pressure cooker cookbook. It is called Great Vegetarian Cooking under Pressure by Lorna J. Sass. All of the recipes look vegan to me. I've tried several and love them all. She does use oil, but I omit it. It has helpful charts of cooking times for beans, grains, vegetables, etc.
