Favorite cookbooks/names of recipes?

In other threads, several people have brought up favorite cookbooks. I was thinking that people who are new to plant-based cooking might like to have that info gathered in one place, and that those who have been doing it for a while could still learn something. For example, it took me a weirdly long time to find Colleen Patrick-Goudreau (Vegan Table! Great tempeh bacon and Muhammara sauce, among other things).

And right now I'm cooking a lot out of Isa Chandra Moskowitz's Appetite for Reduction, which has the best easy marinara sauce, with several variations and a wonderful section on creating bowls (grains, beans/tofu/vegetables, & sauce all mixed together -- major comfort food and really delicious).

Terry Walters's Clean Food has some of the best simple vegetable recipes (Ginger Sesame Greens, Quick Boiled Broccoli and Stems with Toasted Sesame Seeds, Bok Choy and Chickpeas with Cashews) and also some great pates and spreads (like the Lentil-Walnut pate).

Robin Robertson's Vegan Planet is another favorite, though some of the recipes are fairly rich. (The Drunken Noodles are unbelievably good.) It's nice to have options, even if some of the recipes have to be converted. I find that something which calls for two tablespoons of olive oil is great with about a quarter teaspoon (or even 1/8 teaspoon) per serving.

Does anyone want to share favorite cookbooks? Who has recipes that are a hit at potlucks with mixed groups of eaters? How about favorite fast weeknight recipes? Great knockout company food?

I have lots of cookbooks. I keep a separate mini book that I write the recipe and where I got it from so I'm not searching all the time trying to find it. Here goes:

Dr. Barnard, 21 day kickstart book - sun dried tomato lentil loaf (really tasty) Israeli couscous

Garden of Vegan - Banana walnut bars, Kathleen's chocolate cookies, roasted new potatos, rice balls, tomatillo salsa, curried lentils

Dr. Esselstyn's prevent and reverse heart disease, the best salad ever, Lentil salad, Antonia's way!! sloppy lentil joes,

The happy herbivore - Gingerbread mini loaves (really good but strong molasses flavor, but I like that)., cheesecake, fruity cereal bars, french toast, pancakes, breakfast sausage patties, scones, no beef broth, chimichangas, hippie loaf, banana bread

Food for Life (Dr. Barnard) Fiesta salad, SOO GOOD!!, Buckwheat pasta and seitan, broccoli and sun dried tomatos, minestrone, chocolate pudding

Engine 2 diet (rip esselstyn) oatmeal raisin cookies, caulifower soup,

The get healthy go vegan cookbook (Dr. Barnard) Tempeh sloppy joes, spicy red beans and rice, udon noodle salad, grilled peaches in balsamic glaze (to die for).

Christina Cooks (christina Pirello) She uses a lot of oil and loves brown rice syrup, but I cut out the oil and cut down on the BRS. Sauteed Kale and red onions, VERY GOOD!!

I have made a few things out of vegan on the cheap and vegan express. I do have the Vegan Table which has a good old fashioned lentil loaf.

Appetite for Reduction by Isa Chandra Moskowitz! She has many other vegan cookbooks as well, but this one is full of yummy low fat/low cal recipes. Smile The nutritional info is listed for each recipe, which is handy.

I just got one that really got me excited.. made me say "why didn't i think of that?" Recipes are EZ, lots of pictures, not a lot of the "fake" vegan products..

The Happy Herbivore... over 175 Delicious Fat-Free & low fat Vegan Recipes.

She tells how to make Tofu Scramble..... Sweet Potato Home Fries w/apple....regular biscuits...apple crisp muffins...Aztec Corn Soup w/green chilis!!

So many recipes to choose from... there are one dish dinners as well...i plan on working my way thru this book.

~Happy Herbivore is one of my favorites.
~Appetite for Reduction - I love her chapter on vegan bowls, I have been doing vegan bowls ever since reading it.
~McDougall Quick and Easy Cookbook - Over 300 Delicious Low-Fat Recipes You Can Prepare in Fifteen Minutes or Less - uses some canned and processed foods, but great for those nights when you are crunched for time. It's one of those cookbooks that's good for ideas even if you don't follow the recipe.
~Yellow Rose Recipes - has some really good basic sauces.
~The Indian Vegan Kitchen - she does use some oil, but I've made the recipes without it and they've been good.
~Vegan Fire and Spice - self explanatory, excellent book if you have a taste for hot and spicy.
~The Simple Little Vegan Slow Cooker - got it right here on PCRM.

If you're looking for a good website -
http://fatfreevegan.com/ - she has TONS of awesome recipes, all vegan, very low, mostly NO fat. It's one of the first places I look for most anything. She has converted some traditional comfort foods into delicious, healthy vegan foods.

I like Table for Two: Meat- and Dairy-Free Recipes for Two by Joanne Stepaniak. And her Ultimate Uncheese Cookbook.

Also the Vegan Lunch Box by Jennifer McCann.

The 30 Minute Vegan by Mark Reinfeld and Jennifer Murray.

And The How-To Companion to the Feature Documentary Forks Over Knives: Forks Over Knives: The Plant-Based Way to Health. If you haven't seen this movie, check it out.

These are really helpful suggestions. I got a copy of Forks Over Knives, actually both the DVD and the book, to share with family members. And it's great to get the names of recipes in books I have but haven't done much with (sometimes it's accidental whether you manage to find the best recipes in a book by yourself -- the group mind is much smarter!)

It seems as if it would be easy for someone who's already vegan to do the Kickstart, but getting out all the oil is a whole new way of thinking. In fact, the first week, I assumed it would be impossible for me and I'd just try reducing oil a lot to see how that worked. But this week I'm going with no added oil whatsoever to see how that works (though with quite a few added nuts for my very thin spouse, who loses weight at the drop of a hat...)

So in addition to cutting out oil in my usual recipes, and really starting to get into some of those I've neglected for richer cooking, I've ordered a new one that looks great (Blissful Bites: Vegan Meals That Nourish Mind, Body and Spirit. http://www.greenapplebooks.com/book/9781935618515

Dr. Barnard is one of the recommenders, so it should work with the program. Has anyone tried it? Favorite recipes?

Copying this over from my ill-started thread on cookbooks, so all posts can be in the same place...with some additions...

My favorite no-fat vegan cookbooks are actually the ones put out by the no-fat vegan doctors: Dr. Barnard, Dr. McDougall, Dr. Esselstyn, Dr. Ornish, Dr. Fuhrman....as well as the one by Dr. Esselstyn's son, Rip. All their main books are chock full of recipes!

If you like McDougall's recipes, you can have access to hundreds more for free at the McDougall website. Just click on the newsletter link near the top of the page; the newsletter has 5 to 15 recipes each month. With archives going back to 2003...that's a lot of recipes!

Another book that I really like that is mostly low-fat vegan is the one that goes along with the Happy Herbivore website, The Happy Herbivore Cookbook. I love that it is full of flavorful, relatively easy recipes that don't rely on storebought fake mayo, sour cream, etc. I am not wild about vegan/vegetarian cookbooks that seemed to be based on fake cheese and fake dairy!

Another no-fat/low-fat vegan writer that I like is Brianna Clark Grogan. I think I have all her cookbooks!

PCRM actually sells quite a few no-fat/low-fat vegan cookbooks through the website...or at least they did a year ago! I took advantage of our Kickstart discount last year and bought a bunch of low-cost books from there!

I also really enjoy the vegetarian books by Robin Robertson, a favorite being Fresh From the Vegetarian Slow Cooker. While her books aren't always specifically vegan or low-fat, it usually just takes a couple of substitutions/techniques (like steam-sauteing rather than sauteeing in oil) to get you there. My understanding is that Robin IS vegan, so even her vegetarian books tend to be vegan-friendly.

Unfortunately, a lot of the vegan cookbooks out there are pretty unhealthy. Some of them you wonder, why bother to write a vegan cookbook if all you are going to do is sub in unhealthy vegan counterparts for the dairy? I mean, if I want recipes that are just full of fake sour cream, cheese, and mayo...well, I could just buy a regular cookbook and make those substitutions myself! Good vegan food is so much more than that! Or it should be!

I beleive all of Robin Robertson's cookbooks are vegan even if they're labeled vegetarian. I haven't opened on yet that wasn't, and I've even seen some negative reviews on Amazon by people who ordered one and were upset to find it void of lacto/ovo. Go figure Rolling Eyes

One of the things that gets me are the cookbooks that basically sub tofu for everything. Tofu mayo, tofu sour cream, tofu cream cheese, ... Sure tofu may be a good thing in general but (a) basing everything around it is surely not a good idea (b) lots of us either physically or by preference choose NO TOFU! I'm "intolerant" of tofu, my guys dislike the texture (aside from a few small bites in the miso at our fav sushi place), and a friend of ours is clinically allergic to soy - an accidental small bite of soy lecithin might not be a huge problem (minor discomfort) but tofu cheese is all out call 911.

All that said, we love the Veganomicon - mostly for the concepts, ideas, information (and the humor as well!) We love the mix'n'match section - pick a bean, a green, a grain and go. Lots of yummy higher fat recipes which aren't great for everyday BUT are wonderful for bringing to social events - most folks go 'whoa, THAT'S vegan?! It's awesome!" Creates some positive interest - which can then be directed, if they want to pursue it, into the everyday lower fat type recipes (quinoa chickpea pilaf, roasted red pepper hummus, braised greens of all sorts, roasted root veg, and so on)

Another current fav is Everyday Vegan. Not specifically low fat but easy enough to adjust (steam instead of oil for saute and such).

We've got Vegan Lunchbox and have found some favorites in there - tomorrow's community supper is going to be the mushroom corn chowder from the V.L. (little do folks know that their dinner is going to be vegan! The chowder, tossed salad, fresh bread made the way we would at home by a local bakery - we just don't have the time to make multiple loaves right now).

We also google anytime we're looking for something and can't find it in any cookbooks we've got. This coming Sunday, we're using an almond milk ricotta recipe we found online to make eggplant rollatini for a potluck - totally vegan, as well as gluten free. There are folks that look for our dishes specifically - we generally bring vegan low fat dishes, and gluten free whenever possible - I have a little mental database of who can't/doesn't eat what. We've got folks that are celiac, folks allergic to egg white, folks with dairy intolerance, folks who are veg*n by choice, folks who are soy allergic/intolerant. Our dishes, by and large, are safe for the majority of folks - we don't know anyone with tomato allergies, which is good because we LOVE tomato (there'll be a nice tomato based sauce with homegrown and dried herbs on the rollatini - by growing and drying them at home, we know there are no other ingredients added to prevent caking and such).

As with anything, even the most perfectly designed cookbook, recipes will need tweaking to suit individual situations.

I am surprised that no one has mentioned Donna Klein's "Supermarket Vegan" and The Mediterranean Vegan Kitchen." Hundreds of recipes super recipes that even my carnivore/fat eating wife agrees are "keepere." Check them out on Amazon.

I recently picked up 3 cookbooks by Tess Challis called Radiant Health, Inner Wealth; The Two Week Wellness Solution; and Radiance for Life (I think)..I haven't had a chance to cook from them yet, but I'm really looking forward to it. All the recipes seem light and flavorful and she uses lot of veggies. She has a recipe for homemade vegan seasoning/bouillon called Chicky-Baby Seasoning!

Totally in love with the Happy Herbivore chickpea tacos:

Used yellow sprouted corn tortillas (slightly warmed in the toaster oven) and put some slices of baked yellow sweet potato in to go with the chickpeas, lettuce, and tomatoes. Spread the tortillas with the great tofu sour cream from the same book (just silken tofu, lemon juice, mustard, agave, garlic powder etc...left out the dill).

Think this will be a new staple in our household...
