Need help with calorie and carb calculations

In the recipes for Day 18, Friday, there was a recipe for steel-cut oats. The recipe said, "makes 2-3 servings." While strict adherence to a plant-based diet should eliminate the need to count calories, I am still doing so. Even more important, as a diabetic, I still keep track of my carb consumption.
With an indefinite portion size such as "makes 2-3 servings" can anyone share how they determine what portion size to use? How do you know whether the nutritional information (calories, fats, carbs, etc.) applies to 2 servings or 3 servings? How do you figure out how many calories or carbs you have consumed?
