Newbie needs help

So far I am loving this, and love the idea of going vegan. I was most recently inspired by the movie "Earthlings" but have been trying to go vegan/vegetarian for about a year now. My problem is this: I am diabetic so I carefully track my food intake, and when I plug in the recipes from the 21 day kick start, I am coming up low in protein, fat and carbs, and can't seem to get them up without going way over on sodium. Any ideas to increase protein without increasing sodium. Thanks.

You can increase the portions or the snacks if you need more carbs and protein. The fat is deliberately low - this is a low fat low glycemic way of eating. If the fat is REALLY low (lower than what the plan recommends even), there are some simple ways to increase it without messing with other stuff. For example, add a teaspoon of real peanut butter (no sugar no salt added, ingredient list says "Peanuts") to a quartered apple. It adds protein and fat without spiking blood sugar generally. You might want to get Dr. Barnard's book related to diabetes - interesting reading and it explains why the kickstart is arranged as it is (because diabetes is one of the 'targets').

Tampa, I'm sure many more will chime in on this w/a much better explanation then me. But you are going to need to get your mind out of the requirements set for the SAD diet especially for diabetics. Our bodies react differently (read more efficiently) to a plan based diet then to a diet full of animal products. Get Dr. Barnard's book like "bugsmom" suggested, take your time reading and try to relax into this new and amazing lifestyle. You will NOT regret it and your body will thank you over and over again. Everybody "out there" will tell you you need more protein. These are the same folks who push "healthy" oils on you. The approach here is completely different ... you need to read, and read, and then read some more. I think I've read most of the doctors by now ... McDougall, Ornish, Furhman, et al. I still have my old Susan Powters too; she had some great information way back in the day, and you can still find her books, and Ornish's old ones, in thrift stores.

Good point - what exactly are the "too low" values? Protein is usually way too high in most SAD based eating plans, fat also. For protein, (weight in lbs/2.2) x .8 should be the target. For a 150 lb person, that's somewhere in the mid 50 gram per day range. 1 cup of beans is about 1/3 of that. Also, the carb info is usually aimed at folks eating more processed food than the whole foods in this plan. Strictly looking at carbs without including info on fiber and glycemic action is off kilter. --Deb R

tampa - I'm guessing you're sticking to a program given to you by a nutritionist or doctor. I know when I was a young hypoglycemic, the general belief was that if you have blood sugar problems, your protein & carb servings should be a 1:1 ratio at each meal in order to slow the absorption/digestion of the carbs. It also seemed to be assumed that you were eating refined carbs & they only encouraged you to get fiber in your fruit (because non-fibrous fruit really makes you spike). Since then I have done some reading and it seems to me that the old standard was based on accomodating & working around the SAD diet rather than changing it all together. Also, I personally find the focus on protein odd because it is hard on kidneys, as is diabetes. Once a diabetic starts suffering from kidney disease, they tell them to limit their protein intake. It just doesn't make a lot of sense to push something until it creates a really serious problem and then back off of it. If you don't feel comfortable with the lower protein content, I suggest going back to the doctor and addressing with them the sorts of things the other commenters have mentioned. If your carbs are all 'whole' that really should slow the absorption.

Hi Tampa, Salt? yep it seems to be everywhere. I am always on the look out for it because after reducing my salt intake, it actually doesn't enhance the flavor of food for me.. well except chips.. so .. instead of canned beans.. soak dry ones overnight and cook them the next morning. look for no salt added canned corn & canned diced tomatoes. I have found diced tomatoes with no added sugars or salt. Crushed tomatoes are easy to find with no salt. organic ketchup is sometimes fine..

Thanks all. I am not sweating the protein anymore, and I had forgotten that you can get peanut butter without added salt. It's day 5 and I feel amazingly great. I appreciated all your comments and feedback.

Tampa, My partner's Type II Diabetic father stayed with us for a few days last spring and ate (for once in his life) our vegetarian diet (lots of lentil soups and bean stews). By day three, his blood sugar levels had dropped considerably!

Deb--No! I've noticed that for some people all the evidence in the world will not move them toward vegetarianism. I guess some people just really like their meat.

Hi Tampa, glad you see you here! I'm from Tampa too, moved to W Texas a few years ago, but really miss Florida. I worked at Tampa General Hospital and really, really miss it and the water!!
