"Meat" crumbles
Posted Tuesday, January 4, 2011 at 10:53 AM
I don't care for the taste of soy crumbles. Are there any ready made (frozen) vegan products out there that are not soy-based that I should try? Is bulgur always an acceptable alternative for recipes that call for ground meat? Thanks for any advice!

Hmmm...I don't know, because I do use the crumbles or TVP when substituting for ground meat. I think I've seen recipes that use barley in chili, so maybe barley would be a good substitute.

I'm not sure about alternative ground "meat" product, but if you like chicken patties, try the Boca original Chicken pattie. It's great for sandwichs and sliced on top of salads. For ground "meat" you can also crumble some extra firm organic tofu in a little bit of oil until it gets a bit tough. It's pretty good!

And, because we want to avoid soy and sodium, we make our own black bean patties which can then be crumbled for things like tacos or pasta sauce. We've even turned the same recipe into meatless loaf! Our fav black bean patty recipe is from the Veganomicon cookbook. Really simple and we'll sometimes make extra patties so we can just heat and eat for another couple of meals. --Deb R

They also have their regular vegan burger, I have crumbled that up to make a ground beef substitute. It is a combination of wheat and soy, so it might be more to your liking? It might be possible to make something from seitan. I have never made it so I'm not sure (sorry!). I just got a copy of the Veganomicom yesterday and I plan to make some tonight. Let us know what you figure out.

Wow, bugsmom. That's a really good idea. I picked up a bulk package of crumbles on clearance as I was already approaching burnout on them. When I do finally use them up I know what to try next!

I know the first time we tried meat crumbles they were not to our liking.. sometimes it depends what they are in.. i put them on pizza.. and a vegetarian asked how i got away with eating meat! in chili i just skip it and use 3 different kinds of beans. boca burgers and veggie burgers sound like good ideas.

Quorn was nice when we were transitioning from SAD to vegetarian, it made a nice familiar 'meaty' texture as we were learning new recipes and exploring new foods.--Deb R

Yes Quorn uses Egg whites in its products. You need to check the ingredients label if you want to keep vegan. We wouldn't put Quorn in the Vegan category on the recipe web site I worked with. I had to weed it out and place it in Vegetarian. One thing to remember is TVP can be reconstituted in any broth you want use. So simply pick one you really like. When I want a chicken style I use my Cat's delight broth that I normally use for Seitan.
