Recipe makeovers

I am a hugh collector of recipes. Yesterday I was going through them weeding out the keepers, from the ones that are going to the recyle bin. (goodbye "Steak Provence") I was stuck by the ones that could be easily remade vegan, like "Moroccan chicken and lentils", You could just dump the chicken, add more lentils and maybe add some golden raisins. If I try it this weekend and it's successful I'll let you know. Let's hear about other recipe makeovers.

I love making veggie lasagna and replacing the cheese with tofu ricotta. Even my hubby and kids love this cheeze! Take a block of extra firm tofu (drained and pressed), place in a bowl and squeeze through your fingers until it's the consistency of ricotta. Add 2 tsp. lemon juice, 1 clove garlic (minced), 1/4 tsp. salt, dash of pepper, a handful of basil leaves (chopped finely), mash through fingers to mix well, add 2 tsp. olive oil and 1/2 cup nutritional yeast. Mix well with a fork and cover and refrigerate until ready to use. Here's my lasagna recipe

Recipe makeovers...absolutely!

I've run cooking lists on the Internet since the 1990's and am a huge recipe collector as well. I am looking at all of them with new eyes...that's for sure!

Some recipes just are beyond vegan redemption, to be sure. But many can "inspire" your new vegan cooking. What flavor combinations could be applied to vegan food? And like your stew recipe...what could be swapped out for the dead carcass? It's a fun, creative, and hopefully tasty exercise!

I LOVE cornbread. When I make it I usually use the recipe that's on the Quaker Oats Corn Meal box. I'd seen other vegan recipes for corn bread, but they didn't look like they'd be very good. So, one day I tried the Quaker Oats recipe and substituted rice milk for regular milk and applesauce for the egg. It is yummy! I can't even tell the difference and neither can my southern father-in-law. Smile

If you get a chance, can you post that recipe? I get my oats in bulk, love cornbread, and would love to see it if you get a chance.

This is the cornbread recipe straight from the Quaker Oats box with a couple of vegan touches:

1 1/4 cup all purpose flour
3/4 cup cornmeal
1/4 cup sugar
2 tsp baking powder
1/2 tsp salt
1/4 cup vegetable oil
1 cup rice milk
3 TBS apple sauce

Preheat oven to 400 degrees
Grease an 8 or 9 inch round baking pan
Combine dry ingredients
Stir in the wet ingredients, mixing until just moistened
Pour mixture into prepared pan and bake in the preheated oven for 20 - 25 minutes, or until golden brown and a toothpick inserted in the center comes out clean.

Actually I hung on to my steak recipes. Seitan [Wheat Gluten steaks] were invented for a reason. And tofu and tempeh can sub for a lot too. Heck I've even made Amish Chicken Pot Pie with "Chicken" Seitan [all vegan.] And yeah I make my own seitan. It's easy.

Figure out what the ingredients do then sub for them if you can. That easy [and that hard because you have to learn cooking chem in the process.]

I am looking for a lentil loaf recipe to replace meatloaf. Anyone have any ideas? Can I use canned lentils and if so which ones? Thanks!

Summer - I've tried a couple, but I can't remember what I did with the recipe I liked. Sad

Thanks so much for taking the time to put down these recipes. The ricotta and cornbread sound great.

I am going to make my chili for a writers group tomorrow and take my vegan cornbread.

I am on day 7 and just love this program. kc
