Here's a quick, nutritious, fast-food favorite. Even a video with our own PCRM hostess, Jill Eckart. Veggie Sandwich Wrap: A Fast Food Favorite I used pintos, jasmine brown rice, spinach, salsa, corn, and wholewheat lavash from Trader Joe. Yummerrs! Lani

I make veggie wraps about once a week but I don't grill anything and you can pick it up to eat it. I noticed that wrap in the video was open at both ends and pretty loaded, not sure how that was going to be eaten. I layer on hummus, then grated carrots, chopped tomatoes, sprouts of some sort, red onion, avocado for my hubby's wrap, maybe some spinach if I have it, pepperoncini. I wrap them up with both ends tucked in and then I cut it in half. Easy to pick up and eat that way. I usually serve this with baked fries.

I'd forgotten about using hummus with I usually do! And yes, this is a mess to eat I always seem to overload them and then have to eat hovering over my plate. I imagine if you stuffed it less it would be tidier. Otherwise, keep your napkins handy, kids! Lani

Lani I made the wrap! Instead of a water-saute, I steamed some green and red peppers, and yellow squash in a microwave steamer. Then I used fat-free refried beans in a spinach wrap, topped with the steamed veggies, a dollop of guacamole, and salsa. Then a splash of tabasco for some zip . I could see using black beans as a variation and maybe some cabbage and cilantro. Was this the recipe from the Engine 2 diet? Jen

It's SO dang full of possibilities, as you demonstrate! Tabasco, eh? Hmm....

I shared that veggie sandwich wrap on my facebook page a while back... now someone who tried that has decided to check out the kickstart. I know it was partly due to the food being so delicious.

I had leftovers of this from the freezer this week. My hubby wouldn't try it, probably cuz my teen didn't like it (she hates spinach except in manicotti), and my two youngest kids also wouldn't try it. Bummer! I thought it was pretty good.

Cathy sometimes it takes other people some time to come around. Just keep at it. As they see the changes in you both in how you look & feel they will at least become more interested. Also as you get recipes that you like it will probably be at least similar to foods you used to eat (spices). It helps when you eat attractive looking food you consider yummy and enjoy. oh.. i may be assuming they eat none of yours. Do they eat some vegan meals with you? The one thing i tell others that sometimes won't even try a meal is that one meal doesn't make you a vegan.. You have probably gone to taco bell and had a bean burito. It didn't change you forever. You don't see people running out of taco bell screaming, "oh no i'm a vegan"
