What's on your plate for Thursday?

B-oatmeal with goji berries, apple n pear
S-dragon fruit n cup of curried bean soup
L-hmmmm.....not sure yet....hummus, mixed veggies on a wrap?
D-broccoli, tofu n rice

Tomorrow night.....off to my students fashion show.....such amazing talent.....

Just a question....anyone have a fitbit? Tracks steps, sleep etc.

B - porridge with raisins & cinnamon
L - homemade vegetable soup & wholemeal bread with cashew butter & 2 tangerine's
D - aubergine & caramelised onion curry, Indian spicy potatoes & peanuts, Dahl & homemade flatbread. Very low fat chocolate Bundt cake - awesome Vegonomicon recipe

B: steamed broccoli and brown rice with leftover almond-miso sauce.

L: brown rice and sauteed collard greens with garlic and a little soy sauce

D: leftover brown rice and collard greens, with added tomato-basil marinara sauce (yum!). Also, a bunch of roasted sweet potato wedges (half of them with dried dill added, half of them without, and all of them tossed with a little olive oil and sea salt.

I've also got a ton of fresh veggies in my fridge that I'll have to creatively use up before they go bad: broccoli, cauliflower, carrots, beets, cabbage, collard greens, zucchini.

I guess I'll have to steam up a bunch of veggies over the next couple of days.

On a related note, I'm thinking about buying some stackable bamboo steamers. Does anyone know if they're easy to use/clean?

I've used the stackable bamboo steamers in the past & found them good. I also had a dedicated steamer for a while which was great & really easy to use. However I now use stackable stainless steel steamers that fit over a pan on the stove - they are more space saving than the dedicated steamer & easier to clean & longer lasting than the bamboo Smile
